Servings16 stuffed biscuit bites (Serves 8 as an appetizer, 4–6 as a main brunch side)

Ingredients

For the Bacon Cheese Filling

  • 6 strips thick-cut bacon, cooked crisp and finely crumbled
  • 4 oz (115g) cream cheese, softened to room temperature
  • 1 cup (100g) sharp yellow or white cheddar cheese, freshly shredded
  • 2 tbsp fresh green onions or chives, finely chopped
  • 1/2 tsp garlic powder
  • 1/4 tsp freshly cracked black pepper

For the Biscuit Shells & Topping

  • 1 can (16 oz / 450g) refrigerated flaky layers buttermilk biscuits (contains 8 large biscuits)
  • 3 tbsp unsalted butter, melted
  • 1/2 tsp garlic powder
  • 1 tbsp Everything Bagel seasoning (or coarse sea salt and sesame seeds)
  • 2 tbsp fresh parsley, finely chopped for garnish

Instructions

  1. In a skillet over medium heat, fry the thick-cut bacon strips for 6–8 minutes until brown and crispy. Transfer to a paper-towel-lined plate to drain and cool, then chop or crumble into fine bits. In a medium mixing bowl, combine the softened cream cheese, shredded cheddar cheese, crumbled bacon, chopped chives, 1/2 tsp garlic powder, and black pepper. Stir vigorously until a smooth, thick cheese mixture forms.
  2. Preheat your oven to 375°F (190°C). Line a 9×13-inch baking dish or round 10-inch cast-iron skillet with parchment paper or lightly grease with non-stick spray. Open the canned biscuit dough and separate into 8 individual biscuits. Use a sharp chef’s knife or kitchen shears to slice each biscuit horizontally into two thinner rounds, yielding 16 total dough circles. Use your fingertips to press and gently flatten each circle into a 3-inch disc.
  3. Place a tablespoon-sized dollop of the bacon-cheese filling in the center of each dough circle. Pull the edges of the dough up and over the filling, gathering them together at the top. Pinch the seams tightly together with your fingers to form a sealed ball. Roll gently between your palms to smooth out the round shape.
  4. Place the stuffed dough balls seam-side down in your prepared baking dish or cast-iron skillet, placing them about 1/2 inch apart (or touching slightly for pull-apart style). In a small bowl, whisk together the melted butter and remaining 1/2 tsp garlic powder. Brush half of the garlic butter evenly over the tops of the unbaked bites, then sprinkle generously with Everything Bagel seasoning.
  5. Bake at 375°F (190°C) for 14–16 minutes, or until the biscuit tops are puffed, deep golden brown, and cooked through in the center. Remove from the oven and immediately brush with the remaining melted garlic butter. Sprinkle with fresh parsley and allow to cool for 5 minutes before serving warm.
