Servings16 bites (Serves 4–6)

Ingredients

  • Cheese Block (8 oz / 225g): High-moisture, medium-firm cheese works best. Sharp Cheddar, Pepper Jack, or Mozzarella cut into 1-inch cubes. Fresh cheese curds also work wonderfully.
  • Bacon (8–10 strips): Use thin to medium-cut hardwood smoked bacon. Avoid thick-cut bacon, as it takes too long to crisp up and will cause the cheese inside to melt out completely.
  • Toothpicks: Soaked in water for 10 minutes to prevent scorching.
  • Optional Glaze/Seasoning: 1 tablespoon brown sugar (or keto brown sweetener), 1/2 tsp smoked paprika, or a drizzle of spicy honey.

Instructions

Step 1: Prep and Cut the Cheese

  1. Take an 8-ounce block of chilled cheese (Cheddar or Pepper Jack) and cut it into 16 uniform 1-inch cubes.
  2. Place the cubes on a parchment-lined baking sheet and set them in the freezer for 20–30 minutes. Firming up the cheese ensures it holds its structure long enough for the bacon to wrap tightly and crisp up.

Step 2: Prepare the Bacon

  1. Slice each strip of thin-cut bacon in half crosswise.
  2. Optional: Sprinkle the bacon slices lightly with smoked paprika or a dash of black pepper for extra warmth.

Step 3: Wrap and Secure

  1. Remove the chilled cheese cubes from the freezer.
  2. Wrap one half-strip of bacon tightly around each cheese cube, ensuring the bacon overlaps to cover as much cheese surface area as possible.
  3. Secure the bacon end with a water-soaked wooden toothpick driven straight through the center of the cheese cube.

Step 4: Bake to Crispy Perfection

  1. Preheat your oven to 400°F (200°C) .
  2. Place a wire baking rack inside a rimmed baking sheet. Line the bottom sheet with aluminum foil for easy cleanup.
  3. Arrange the wrapped bites on the wire rack, leaving 1 inch between each bite so hot air circulates evenly.
  4. Bake at 400°F for 12 to 15 minutes until the bacon is browned and crisp. Watch closely during the last 3 minutes so the cheese does not over-melt.

Step 5: Rest and Serve

  1. Remove from the oven and let rest on the rack for 3 to 5 minutes. This allows the melted cheese inside to settle so it won’t instantly burst when bitten into.
  2. Transfer to a serving board, garnish with chopped fresh parsley or chives, and serve warm with ranch dressing or hot honey.
