Instructions
- Preheat oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper or aluminum foil and lightly grease with cooking spray or olive oil.
- In a large mixing bowl, combine ground chicken, breadcrumbs, beaten egg, minced garlic, chopped parsley, grated Parmesan cheese, salt, and black pepper. Gently mix until just combined, avoiding overmixing.
- Scoop the mixture (about 1.5 to 2 tablespoons per meatball) and roll into smooth spheres. Place on the prepared baking sheet with space between each. Lightly brush tops with olive oil.
- Bake for 20 to 25 minutes, or until the internal temperature reaches 165°F (74°C) and exteriors are browned.
- While meatballs bake, melt butter in a medium saucepan over medium heat. Add rice and stir for 1 to 2 minutes until lightly toasted.
- Pour in chicken broth and salt. Bring to a rapid boil. Cover tightly, reduce heat to lowest setting, and simmer undisturbed for 15 to 18 minutes.
- Remove from heat and let stand covered for 5 minutes to steam. Remove lid, fluff with a fork, and fold in fresh chopped herbs, lemon zest, and a squeeze of lemon juice.
- Spoon herbed rice onto plates, top with 4 to 5 warm meatballs, and garnish with extra Parmesan cheese and fresh parsley. Serve immediately.

Notes
Don't overwork the meat to keep the texture light. Wet your hands with cold water if the mixture sticks. You can roll raw meatballs ahead of time and store them covered in the refrigerator for up to 24 hours before baking.
