For the Cheese Blend:

  • 3 cups freshly shredded sharp cheddar cheese (divided: 2 cups for the sauce, 1 cup for the topping)
  • 2 cups freshly shredded Gruyère or Colby-Jack cheese (divided: 1 ½ cups for the sauce, ½ cup for the topping)
  • 1 cup freshly shredded Velveeta or mild American cheese (optional, for unmatched gooey creaminess)

Instructions

Step 1: Cook the Pasta Al Dente

  1. Bring a large pot of generously salted water to a rolling boil.
  2. Add the 1 pound of elbow macaroni and cook 2 minutes shy of the package instructions (usually about 6 to 7 minutes). The pasta will continue to cook and absorb liquids while baking in the oven; stopping early prevents mushy noodles.
  3. Drain the pasta thoroughly, return it to the pot, and toss immediately with 2 tablespoons of unsalted butter to prevent sticking. Set aside.

Step 2: Preheat and Prepare the Baking Dish

  1. Preheat your oven to 375°F (190°C).

Step 3: Make the Roux
