Ingredients
- 2 chicken leg quarters
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and pepper to taste
- Fresh thyme or rosemary (optional)
- 2 large sweet potatoes, peeled and diced
- 2 tbsp butter
- 1/4 cup milk (optional)
- 1 cup green beans, trimmed
- 1 tbsp olive oil or butter
- 1 garlic clove, minced
- 2 small beets, boiled or roasted, peeled, and diced
- 1 tbsp vinegar (optional for a tangy flavor)
- 2 cups shredded cabbage
- 1 carrot, grated
- 1/4 cup mayonnaise
Instructions
- Preheat your oven to 400°F (200°C).
- Rub the chicken with olive oil, then season generously with garlic powder, paprika, salt, and pepper. Add fresh thyme or rosemary for extra flavor if desired.
- Place the chicken in a roasting pan and roast for 35-40 minutes, or until the skin is golden and crispy, and the internal temperature reaches 165°F (75°C). Let the chicken rest for a few minutes before serving.
- Boil the sweet potatoes in a pot of salted water until tender, about 15-20 minutes.
- Drain the water and mash the sweet potatoes with butter, adding milk if you prefer a creamier consistency. Season with salt and pepper to taste, and set aside.
- In a pan, heat the olive oil or butter over medium heat.
- Add the garlic and sauté until fragrant.
- Add the green beans and cook for about 5-7 minutes, until tender but still crisp. Season with salt and pepper and remove from heat.
- Boil or roast the beets until tender (about 30-40 minutes if boiling, or 45-50 minutes if roasting).
- Once cooked, peel and dice the beets. Add a splash of vinegar if you prefer a tangy flavor, and season with salt and pepper.
- In a large bowl, combine the shredded cabbage and grated carrot.
- Stir in the mayonnaise and vinegar, and season with salt and pepper.
- Toss everything together and refrigerate for at least 30 minutes before serving.
Notes
Crispy Chicken Skin: To get the crispiest skin on your roasted chicken, pat the skin dry with paper towels before applying the oil and seasoning. This helps remove any moisture that would otherwise prevent crisping. Sweet Potato Variations: For a more savory version of the mashed sweet potatoes, try adding a dash of smoked paprika or garlic powder. For a sweeter version, you can add a drizzle of honey or maple syrup. Prepare in Advance: The beetroot and coleslaw can be made in advance and stored in the refrigerator. In fact, coleslaw tastes better when it’s had time to sit and absorb the flavors of the dressing.
