Butter Cod Bites are versatile and can be served in many ways, including over steamed white rice, alongside roasted vegetables, with a fresh green salad, as a seafood appetizer, with garlic mashed potatoes, in tacos with cabbage slaw, with tartar sauce or aioli, or alongside French fries.
Ingredients
- 1 pound (450g) fresh cod fillets, skin removed
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon paprika
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ cup all-purpose flour
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1 tablespoon fresh lemon juice
- 1 tablespoon chopped fresh parsley
- ¼ teaspoon red pepper flakes (optional)

Instructions
- Pat the cod fillets dry using paper towels. Cut the cod into bite-sized cubes, approximately 1 to 1½ inches in size. Place the cod pieces in a large bowl.
- Add salt, black pepper, paprika, garlic powder, and onion powder to the fish. Gently toss until all pieces are evenly coated with seasoning. Allow the fish to rest for 5 minutes.
- Place the flour in a shallow bowl. Lightly dredge each piece of cod in the flour, shaking off any excess.
- Place a large skillet over medium-high heat. Add the olive oil and allow it to heat for about 1 minute until it shimmers slightly but does not smoke.
- Carefully place the coated cod pieces into the hot skillet in a single layer. Cook for approximately 2 to 3 minutes per side until golden brown and the internal temperature reaches 145°F (63°C). Transfer the cooked fish to a clean plate.
- Reduce the heat to medium. Add butter to the same skillet. Once melted, add minced garlic and cook for 30 seconds until fragrant. Stir in lemon juice and optional red pepper flakes. Cook for another minute while stirring.
- Return the cooked cod bites to the skillet. Gently toss to coat each piece with the garlic butter sauce. Cook for 1 minute. Add chopped parsley and stir lightly.
- Transfer the Butter Cod Bites to a serving platter. Garnish with fresh parsley and lemon wedges. Serve immediately while hot and crispy.
Notes
Storage: Refrigerate leftovers in an airtight container for up to 3 days or freeze in a freezer-safe container for up to 2 months. Reheat in an oven or air fryer at 350°F (175°C) for 5 to 7 minutes. Tips: Use fresh fish, dry the fish thoroughly, do not overcrowd the pan, watch the garlic to prevent burning, and finish with lemon. Variations include adding cayenne pepper, mixing Parmesan into the flour, adding herbs to the sauce, or using gluten-free flour/cornstarch. Alternative cooking methods: Bake at 425°F (220°C) for 12–15 minutes or air fry at 400°F (200°C) for 8–10 minutes.
