Instructions

  1. Preheat oven to 350°F (175°C). Grease a standard 9×5-inch loaf pan with non-stick cooking spray or butter. Line the bottom and sides with parchment paper, leaving an overhang on the long sides.
  2. In a large bowl, whisk together the all-purpose flour, baking soda, baking powder, sea salt, ground cinnamon, nutmeg, and ginger until evenly combined. Set aside.
  3. In a separate medium bowl, mash the ripe bananas with a fork until smooth. Whisk in the melted butter, brown sugar, and granulated sugar until well incorporated. Add the room-temperature eggs one at a time, whisking well after each addition, then stir in the vanilla extract.
  4. Pour the wet banana mixture into the bowl with the dry flour mixture. Using a rubber spatula, fold gently just until combined. Gently fold in the finely shredded carrots and chopped pecans until evenly distributed throughout the batter.
  5. Pour the batter into the prepared 9×5-inch loaf pan and smooth the top with a spatula. Bake on the middle rack for 55 to 65 minutes. At the 35-minute mark, check the loaf; if the top is browning too quickly, tent it loosely with aluminum foil. The bread is done when a wooden toothpick inserted into the center comes out clean or with just a few moist crumbs.
  6. Remove the loaf from the oven and set it on a wire cooling rack in the pan for 15 minutes. Use the parchment paper overhang to carefully lift the loaf out of the pan, then let it cool completely on the rack for about 30 to 45 minutes before frosting.
  7. While the loaf cools, prepare the frosting. In a medium bowl, beat the softened cream cheese and butter with a hand mixer until smooth and fluffy (approx. 2 minutes). Add the sifted powdered sugar, vanilla extract, and a pinch of salt. Beat on low speed until combined, then increase to medium-high until creamy. Spread evenly over the cooled banana bread and top with extra chopped pecans.

Notes

Pro Baking Tips: Grate your own carrots using the fine side of a box grater for better texture; use overripe bananas for sweetness; do not overmix the batter to avoid a tough loaf. Storage: Unfrosted bread can be stored at room temperature for up to 3 days or frozen for up to 3 months. Frosted bread should be stored in an airtight container in the refrigerator for up to 5 to 6 days.
