  • 1 lb (450 g) ground beef (80/20 or 85/15 lean-to-fat ratio)

  • ½ tsp (1.5 g) onion powder
  • 1 tsp (6 g) fine sea salt
  • ½ tsp (1.5 g) fresh cracked black pepper
  • ¼ cup (60 ml) beef bone broth or water
  • 2 sheets (approx. 14 oz / 400 g total) all-butter puff pastry sheets, thawed in refrigerator overnight
  • 1 cup (115 g) sharp yellow cheddar cheese, freshly shredded
  • 1 cup (115 g) low-moisture whole-milk mozzarella, freshly shredded
  • 2 tbsp all-purpose flour (for dusting work surface)
  • 1 large egg
  • 1 tbsp (15 ml) whole milk or water
  • 1 tbsp sesame seeds or everything bagel seasoning (optional garnish)
  • A pinch flaky sea salt (optional)
  • 2 tbsp fresh flat-leaf parsley, finely chopped for garnish

Instructions

  1. Set a large 12-inch heavy-bottomed skillet over medium-high heat and add olive oil. Once shimmering, add minced yellow onion and sauté for 3 to 4 minutes until translucent with light golden edges. Stir in minced garlic and cook for 30 seconds until fragrant.
  2. Add ground beef to the center of the skillet. Break the meat into small, even crumbles with a wooden spoon or meat masher. Sear over medium-high heat for 6 to 8 minutes without stirring excessively until completely browned and no pink remains.
  3. Tilt the skillet and spoon off excess liquid grease, leaving roughly 1 tablespoon of rendered fat. Reduce heat to medium-low. Stir in tomato paste and cook for 1 to 2 minutes.
  4. Add Worcestershire sauce, Dijon mustard, smoked paprika, dried oregano, onion powder, sea salt, black pepper, and beef broth. Stir well, scraping up browned bits. Simmer on medium-low for 3 to 4 minutes until liquid reduces completely and beef is glossy and moist.
  5. Remove pan from heat and spread the cooked beef onto a shallow plate or baking sheet to cool to room temperature (about 15 minutes).
  6. Preheat the oven to 400°F (200°C) with convection fan on, or 425°F (220°C) standard bake. Line a large rimmed baking sheet with parchment paper. Lightly dust a clean work surface with all-purpose flour.
  7. Unfold one sheet of thawed, cold puff pastry and roll it out into an even 10×12-inch rectangle. Repeat with the second sheet.
  8. Combine shredded cheddar and mozzarella in a small bowl. Evenly divide the cheese blend across both pastry sheets, leaving a clear 1-inch border along all four edges.
  9. Distribute the cooled beef mixture evenly over the cheese layer, gently pressing it down with the back of a spoon to create a compact, flat layer.
  10. In a small bowl, whisk together the egg and 1 tablespoon of milk to create an egg wash. Brush a thin layer of egg wash along the exposed borders of the pastry.
  11. Starting from the long edge nearest you, roll the pastry tightly over the filling into a snug log, ending seam-side down. Pinch the long seam to seal it firmly.
  12. Using a sharp chef’s knife or bench scraper, slice each rolled log crosswise into four equal pocket sections (or eight equal rounds for pinwheels). Press the open ends with the tines of a fork to crimp and seal, or leave exposed for a rustic look.
  13. Transfer the pockets onto the prepared baking sheet, spacing them at least 2 inches apart. Cut two to three small diagonal slits into the top crust of each pocket to act as steam vents.
  14. Brush the tops and sides generously with the remaining egg wash. Sprinkle with sesame seeds and a pinch of flaky sea salt.
  15. Bake for 22 to 26 minutes at 400°F (200°C) until the exterior is puffed, deeply golden brown, and crisp. If tops brown too quickly, loosely tent with aluminum foil.
