Instructions

Step 1: Prep the Oven & Baking Sheet

  1. Preheat your oven to 400°F (200°C) . Line a large rimmed baking sheet with parchment paper or a silicone baking mat.

Step 2: Mix the Mustard Spread

  1. In a small bowl, whisk together the Dijon mustard and whole grain mustard . Combining both gives you a smooth base with texture and flavor depth.

Step 3: Roll & Spread

  1. Lightly flour a clean work surface. Unroll your chilled sheet of puff pastry. Using a rolling pin, gently smooth out any seams. Evenly spread the mixed mustard across the entire surface of the pastry, leaving a tiny ¼-inch border along the edges.

Step 4: Add the Cheesy Filling

  1. Sprinkle the grated sharp cheddar , Parmesan cheese , chopped fresh thyme , garlic powder, and black pepper evenly over the mustard coating. Gently press down on the cheese with the palm of your hand or a rolling pin so it sticks to the dough.

Step 5: Slice & Twist

  1. Fold the pastry sheet in half (envelope-style) to enclose the cheese filling, or keep it open for single-layer twists. Using a pizza cutter or sharp knife, slice the dough into long strips about ½-inch to ¾-inch wide .
  2. Hold each strip at both ends and twist in opposite directions 3 to 4 times to create spiral twists. Place each twist on the parchment-lined baking sheet, leaving about an inch between each.

Step 6: Egg Wash & Bake

  1. Lightly brush the tops of the twists with the egg wash to give them a brilliant golden shine. Sprinkle with a tiny pinch of coarse sea salt.
  2. Bake in the preheated oven for 18 to 20 minutes , or until the pastry is well puffed, crispy, and rich golden brown in color.

Step 7: Cool & Serve

  1. Remove from the oven and transfer the twists to a wire cooling rack. Allow them to cool for 5 minutes so the melted cheese sets. Serve warm or at room temperature alongside dipping sauces like honey mustard or warm marinara.
