Equipment
- Small dry skillet or heavy pan (for toasting almonds)
- Large wooden cutting board and sharp chef’s knife
- Small glass jar with lid or medium mixing bowl with a whisk
- Wide, shallow salad serving bowl
- Silicone spatula or wide salad spoons
Ingredients
Salad Produce & Crunch
- Ripe Hass avocados: 3 large (firm yet yielding gently to slight thumb pressure), pitted, peeled, and diced into 3/4-inch cubes
- English cucumber: 1 large (or 3 Persian cucumbers), washed, unpeeled, quartered lengthwise, and sliced into 1/2-inch chunks
- Raw whole almonds: 1/2 cup, roughly crushed with a rolling pin or coarsely chopped
- Fresh dill weed: 1/3 cup, thoroughly washed, dried, stems removed, and finely chopped
- Thinly sliced shallot: 1 small (about 2 tablespoons), soaked in ice water for 5 minutes to mellow sharpness, then drained
- Baby spinach or tender butter lettuce (optional base): 2 cups, washed and dried (leave out if serving as a pure chop salad)
Creamy Lemon-Dill Dressing
- Plain whole-milk Greek yogurt: 1/3 cup (or dairy-free unsweetened almond/coconut yogurt)
- Extra virgin olive oil: 2 tablespoons (first cold-pressed for maximum fruitiness)
- Fresh lemon juice: 2 tablespoons (from about 1 large juicy lemon)
- Fresh lemon zest: 1/2 teaspoon, finely grated
- Garlic: 1 small clove, microplaned or minced into a fine paste
- Dijon mustard: 1 teaspoon (acts as a flavor builder and natural emulsifier)
- Pure maple syrup or raw honey: 1/2 teaspoon (optional, balances the tart citrus)
- Fine sea salt: 3/4 teaspoon (or to taste)
- Freshly cracked black pepper: 1/2 teaspoon
- Flaky Maldon sea salt: 1/4 teaspoon (for finishing touch)

Instructions
Step 1: Toast and Crush the Almonds (Intensity: Low-Medium)
- Place a small, dry skillet over medium-low heat . Add the roughly crushed almonds into the bare pan—do not add cooking oil. Toast the nuts for 4 to 5 minutes , stirring or tossing the skillet frequently. Watch them carefully: as the natural nut oils heat up, they transition rapidly from pale to fragrant and golden-brown.
- Once aromatic and toasted, immediately remove the pan from heat and tip the nuts onto a cool plate. Leaving them in the hot pan will cause the residual heat to scorch their delicate skins. Set aside to cool to room temperature so they stay crisp.
Step 2: Whisk the Creamy Emulsion
- In a medium bowl or glass jar, combine the plain Greek yogurt, extra virgin olive oil, fresh lemon juice, lemon zest, minced garlic, Dijon mustard, maple syrup (if using), sea salt, and cracked black pepper.
- Whisk vigorously for about 45 to 60 seconds until the oil and yogurt bind together into a smooth, pourable, pale-yellow dressing. Taste with a cucumber slice; it should taste boldly tangy and well-salted, knowing that it will season rich avocados.
Step 3: Prep the Fresh Produce
- Cut the English cucumber lengthwise into quarters, then slice across into thick half-moon or triangle bites. If using standard slicing cucumbers with thick waxy skin and watery seeds, peel them and scrape out the seed channel with a spoon before slicing.
- Halve the avocados, remove the pits, score the green flesh inside the skin into uniform 3/4-inch dice, and scoop the cubes gently out with a large spoon into your prep bowl. Mince your fresh dill finely, reserving a pinch for garnish.
Step 4: Assemble the Salad
- In a wide, shallow serving bowl (which prevents the delicate avocado from being squashed beneath heavy layers), combine the diced cucumber, shallot, and two-thirds of the fresh chopped dill.
- Pour approximately two-thirds of the creamy lemon-herb dressing over the cucumber mixture and gently toss with a silicone spatula to coat every slice evenly.
Step 5: Incorporate the Avocado (Intensity: Very Gentle)
- Add the diced avocado cubes into the dressed cucumbers. Drizzle the remaining dressing directly over the exposed avocado pieces.
- Using wide salad spoons or a broad rubber spatula, fold the ingredients together using slow, sweeping, under-and-over motions. Be gentle—the goal is to coat the avocado surfaces with dressing while keeping the edges intact and preventing the salad from turning into mashed guacamole.
Step 6: Garnish and Finish
- Just before carrying the dish to the table, scatter the toasted crushed almonds across the top of the salad. Sprinkle the reserved fresh dill, along with a final pinch of flaky Maldon sea salt and cracked black pepper across the surface for presentation and textural pop.
