Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9 × 13-inch baking dish.
  2. Peel and slice the potatoes into thin, even pieces so they cook evenly.
  3. In a large mixing bowl, combine the cream of chicken soup and sour cream. Stir until smooth and creamy.
  4. Cut the chicken breasts into evenly sized pieces. Add a little black pepper and garlic powder if desired.
  5. Arrange the sliced potatoes in the bottom of the prepared baking dish. Place the chicken pieces over the potatoes.
  6. Spread the creamy mixture evenly over the chicken and potatoes, making sure everything is well coated.
  7. Cover the dish tightly with aluminum foil and bake for approximately 35–40 minutes.
  8. Remove the foil and continue baking until the potatoes are tender and the chicken reaches an internal temperature of 165°F (74°C).
  9. Allow the casserole to rest for 5–10 minutes before serving. Spoon the creamy sauce over each portion.

Notes

Alternative slow-cooker method: Place the potatoes, chicken, soup, and sour cream into a slow cooker. Cook on LOW for approximately 4–5 hours, or until the potatoes are tender and the chicken reaches 165°F (74°C). Avoid leaving the chicken on the warm setting for extended periods. Serving suggestions include fresh green beans, a crisp garden salad, steamed broccoli, warm dinner rolls, roasted carrots, or garlic bread. Sprinkle fresh parsley over the top for presentation.
