Instructions

  1. Prepare workspace: Ensure whipped topping is thawed. Wash and thoroughly dry all berries. Chop strawberries into bite-sized pieces. Halve large blackberries if desired.
  2. Blend cottage cheese in a food processor or blender until smooth and creamy (30 seconds to 2 minutes). Transfer to a large mixing bowl.
  3. Add Greek yogurt to the blended cottage cheese and mix until smooth and uniform.
  4. Gradually sprinkle instant cheesecake pudding mix over the mixture, whisking continuously to prevent lumps. Add milk 1 tablespoon at a time if the mixture is too thick.
  5. Stir in vanilla extract and lemon zest (if using). Add powdered sugar if a sweeter flavor is desired.
  6. Gently fold in the thawed whipped topping using a rubber spatula until mostly incorporated and uniform. Do not overmix.
  7. Check consistency: If too thick, add milk 1 teaspoon at a time. If too loose, refrigerate for 15-20 minutes.
  8. Fold in half of the chopped strawberries.
  9. Gently fold in the blueberries, distributing them evenly without crushing.
  10. Fold in the raspberries and blackberries last, using a gentle motion to preserve their shape.
  11. Taste and adjust flavor with additional powdered sugar or lemon zest if needed.
  12. Cover the bowl and refrigerate for at least 1 hour, or up to 2 hours for firmer consistency.
  13. Prepare topping: Crush graham crackers. Mix with melted butter and brown sugar (if using) until texture resembles damp sand.
  14. Remove dessert from refrigerator and give a gentle fold if fruit has settled.
  15. Spoon mixture into individual cups or a serving bowl, filling approximately three-quarters full.
  16. Garnish with fresh berries and sprinkle with graham cracker topping just before serving.

Notes

Use fresh berries for best texture; if using frozen, thaw and drain thoroughly to prevent a watery mixture. Serve cold. Do not freeze if serving as a soft, fluffy dessert, as texture may change. Adjust sweetness to preference.
