Ingredients
For the Chicken:
- 4 boneless, skinless chicken breasts (about 6-8 oz each, patted dry)
- 1 tsp kosher salt (plus more to taste)
- ½ tsp freshly ground black pepper
- 1 tsp garlic powder
- ½ tsp sweet paprika
- 1 tbsp olive oil
- 1 tbsp unsalted butter
For the Creamy Mushroom Sauce:
- 2 tbsp unsalted butter
- 16 oz (1 lb) cremini or button mushrooms (wiped clean, thickly sliced)
- 1 medium yellow onion (diced)
- 3 cloves garlic (minced)
- ½ cup chicken broth (low sodium recommended)
- 1 cup heavy cream (see tips for substitutes)
- 2 tsp fresh thyme leaves (or ½ tsp dried thyme)
- 1 tsp Worcestershire sauce (adds umami)
- 2 tbsp fresh parsley (chopped, for garnish)

Instructions
Step 1: Prep the Produce and Season Chicken

- Wipe the mushrooms clean with a damp paper towel (don’t wash them, or they will become soggy). Slice them thickly. Dice the onion , mince the garlic , and chop the parsley .
- Pat the chicken breasts very dry with paper towels. (Dry chicken sears better).
- In a small bowl, mix the salt , pepper , garlic powder , and paprika .
- Season both sides of each chicken breast generously with the spice mixture.
Step 2: Sear the Chicken
- Intensity: Medium-High | Time: 10-12 mins
- Place a large, heavy-bottomed skillet (cast iron or stainless steel works best) over Medium-High heat .
- Add 1 tbsp olive oil and 1 tbsp unsalted butter . Swirl the pan until the butter melts and begins to sizzle.
- Carefully add the chicken breasts to the hot pan. Do not crowd the pan. If they don’t fit with space around them, cook them in two batches.
- Cook undisturbed for 5-6 minutes. You want a strong, deep golden-brown crust to form.
- Flip the chicken. It should release easily from the pan if properly seared. Cook the other side for another 5-6 minutes, until golden brown.
- Note: The chicken does not need to be cooked completely through yet; it will finish cooking later in the sauce.
- Transfer the seared chicken to a plate and set aside.
Step 3: Sauté the Mushrooms and Onions
- Intensity: Medium | Time: 8-10 mins
- Reduce the skillet heat to Medium .
- Add the remaining 2 tbsp butter to the pan. Once melted, add the sliced mushrooms and diced onions .
- Spread them out and let them cook, stirring occasionally. The mushrooms will release their liquid first, and then begin to turn a deep, savory brown. Cook until all the liquid has evaporated and the mushrooms are golden (about 8 minutes).
- Add the minced garlic and fresh thyme . Stir constantly for 1 minute until the garlic is very fragrant. Do not let the garlic burn.
Step 4: Deglaze the Pan
- Intensity: Medium | Time: 2 mins
- Pour the chicken broth into the skillet.
- Use a wooden spoon to scrape up all the browned bits (called “fond”) stuck to the bottom of the pan. These bits are packed with savory flavor and are essential for a good sauce.
- Allow the broth to simmer and reduce by about half.
Step 5: Finish the Sauce and Smother Chicken
- Intensity: Medium, then Low | Time: 5 mins
- Reduce the heat to Medium-Low .
- Stir in the heavy cream and the Worcestershire sauce . Bring the mixture to a gentle simmer (do not boil rapidly).
- Taste the sauce and add more salt and pepper if necessary.
- Nestle the seared chicken breasts (and any accumulated juices from the plate) back into the simmering sauce.
- Spoon the mushroom sauce generously over the chicken breasts (the “smothering” part).
- Simmer gently for an additional 3-5 minutes , or until the sauce has thickened slightly and the chicken is completely cooked through (reaching an internal temperature of 165°F / 74°C on a meat thermometer).
Step 6: Serve
- Remove from heat immediately. Garnish generously with fresh chopped parsley . Serve warm.
