Instructions

  1. Prepare the Crust: Mix almond flour, melted butter, granulated sweetener, vanilla, and salt in a bowl until coarse crumbs form. Press firmly into the base of a parchment-lined 8-inch springform pan. Freeze for 15 minutes to set.
  2. Simmer the Berries: Combine blueberries, 1 tbsp lemon juice, water, and 1 tbsp sweetener in a small saucepan over medium heat (around 220°F/105°C). Cook for 4–5 minutes until berries burst and sauce reduces to a thick glaze; remove from heat and chill fully in the fridge.
  3. Bloom Gelatin: Stir unflavored gelatin into 2 tablespoons of hot water; let sit for 2 minutes until dissolved and clear.
  4. Whip the Base: In a large bowl, beat room-temperature cream cheese and Greek yogurt on medium speed for 2 minutes until glossy and clump-free.
  5. Incorporate Protein: Sift in protein powder and powdered sweetener, then pour in fresh lemon juice, lemon zest, and the dissolved gelatin liquid. Beat on low speed for 1 minute until smooth, thick, and mousse-like (avoid over-beating to prevent air collapse).
  6. Assemble & Swirl: Pour lemon filling over the chilled almond crust. Drop spoonfuls of chilled blueberry compote over the surface and use a butter knife or toothpick to gently drag and swirl the sauce into a marbled pattern.
  7. Chill to Set: Refrigerate uncovered for at least 4 hours (or overnight) until the center feels springy and firm to a light touch before unmolding and slicing.

Notes

Storage: Always keep refrigerated; leaving this cake at room temperature for over 90 minutes will soften the gelatin emulsion. Reheating: Do not reheat; this dessert is designed to be served chilled or semi-frozen. Allergy Swap: Replace almond flour with crushed sunflower seed meal or gluten-free rolled oat flour for a tree-nut-free crust. Flavor Boost: Fold 1 tablespoon of finely minced fresh basil or mint into the blueberry reduction for a gourmet finish.
