Ingredients

For the Chicken Meatballs:

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 garlic cloves, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp butter

For the Creamy Parmesan Sauce:

  • 2 tbsp butter
  • 2 garlic cloves, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste

For the Pasta:

  • 12 oz spaghetti or linguine, cooked according to package instructions

Instructions

  1. Prepare the Chicken Meatballs:
In a mixing bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, egg, minced garlic, Italian seasoning, paprika, salt, and black pepper. Mix well and form into small meatballs.
  2. Cook the Meatballs:
Heat 2 tablespoons of butter in a skillet over medium heat. Cook the meatballs for 6-8 minutes, turning occasionally, until golden brown and fully cooked. Remove them from the skillet and set aside.
  3. Make the Sauce:
In the same skillet, melt 2 tablespoons of butter over medium heat. Sauté the minced garlic for about 1 minute, until fragrant. Add the heavy cream, chicken broth, and Parmesan cheese. Stir well and let the sauce simmer for 3-4 minutes, until it thickens slightly. Season with salt and black pepper to taste.
  4. Combine Pasta and Sauce:
Add the cooked pasta to the creamy sauce, tossing to coat the noodles evenly. Return the meatballs to the skillet and spoon some sauce over them.
  5. Serve:
Serve the dish warm, garnished with extra Parmesan cheese or freshly chopped parsley for added flavor and presentation.
