Ingredients

For the Baked Potatoes

  • 4 large Russet or Yukon Gold potatoes (about 8–10 oz each), scrubbed and thoroughly dried
  • 2 tablespoons olive oil or melted unsalted butter
  • 1 teaspoon coarse sea salt or kosher salt
  • 1/2 teaspoon freshly cracked black pepper

For the Creamy Pour-Over Sauce

  • 2 tablespoons unsalted butter
  • 1 small shallot , finely diced
  • 3 cloves fresh garlic , minced
  • 1 cup heavy cream (or double cream)
  • 1/2 cup whole milk or chicken/vegetable broth
  • 1 cup sharp cheddar cheese , freshly shredded
  • 1/2 cup Gruyère or Parmesan cheese , finely grated
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional, for subtle warmth)
  • Salt and fresh black pepper to taste

Toppings & Garnishes

  • 4 slices thick-cut bacon , cooked crispy and crumbled
  • 1/4 cup fresh chives or green onions , finely chopped
  • 1/2 cup sour cream (optional, served on the side)

Instructions

  1. Preheat your oven to 400°F (200°C). Wash and thoroughly dry the potatoes using a kitchen towel. Prick each potato 4–5 times with a fork to allow steam to escape during baking. Rub each potato evenly with olive oil, then liberally coat the outside with coarse sea salt and black pepper.
  2. Place the seasoned potatoes directly on the center oven rack (place a baking sheet on the lower rack to catch drippings). Bake for 50 to 60 minutes, or until the skins are crisp and a knife slides effortlessly into the center.
  3. While the potatoes finish baking, melt 2 tablespoons of unsalted butter in a medium saucepan over medium-low heat. Add the diced shallot and minced garlic. Sauté for 2 to 3 minutes until soft and fragrant, taking care not to brown the garlic.
  4. Pour in the heavy cream and milk (or broth). Turn the heat down to low and bring the mixture to a faint, gentle simmer for 3 to 4 minutes until slightly thickened. Stir in the smoked paprika, cayenne, salt, and black pepper.
  5. Remove the saucepan from the direct heat source. Gradually whisk in the shredded cheddar and grated Gruyère/Parmesan cheese a handful at a time until completely melted, smooth, and glossy.
  6. Carefully remove the potatoes from the oven. Slice each potato lengthwise along the top and gently press the ends toward the center to bloom open the fluffy center. Fluff the insides lightly with a fork. Generously pour the warm cream sauce over each potato, letting it overflow onto the plate. Top with crumbled bacon and fresh chives.
