Ingredients

  • 1/2 cup (1 stick) unsalted butter
  • 1 cup packed light brown sugar
  • 2 tablespoons pure maple syrup
  • 1/2 teaspoon kosher salt
  • 1 large loaf (approx. 1 pound) Challah, Brioche, or French bread, cut into 1-inch thick slices
  • 6 large eggs, room temperature
  • 1 1/2 cups whole milk
  • 1 cup heavy cream
  • 2 teaspoons pure vanilla extract
  • 1/2 teaspoon pure almond extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/3 cup superfine white sugar (granulated sugar works as an alternative)
  • Fresh raspberries, blackberries, and powdered sugar for serving (optional)

Instructions

  1. In a medium saucepan set over low heat, melt the unsalted butter. Add the packed brown sugar, maple syrup, and kosher salt. Stir continuously with a heatproof spatula until the sugar dissolves completely into a smooth, bubbling caramel sauce (about 3–5 minutes).
  2. Pour the hot caramel directly into the bottom of an ungreased 9×13-inch baking dish, spreading it evenly across the bottom.
  3. Arrange the thick bread slices over the caramel base in two tight rows. Slight overlapping is fine, but aim to fit all slices neatly so they can fully absorb the custard.
  4. In a large mixing bowl, combine the eggs, whole milk, heavy cream, vanilla extract, almond extract, cinnamon, and nutmeg. Whisk vigorously until the mixture is fully emulsified and no egg streaks remain.
  5. Slow-pour the custard mixture over the bread slices, ensuring every piece gets saturated. Press down lightly on the bread using the back of a spoon to submerge it into the liquid.
  6. Cover the baking dish tightly with plastic wrap or aluminum foil. Transfer to the refrigerator for at least 8 hours, ideally overnight.
  7. Remove the dish from the refrigerator 20 minutes before baking to take the chill off. Preheat your oven to 350°F (175°C).
  8. Uncover the casserole dish and place it on the center rack. Bake for 35–40 minutes, until the top is golden brown, the edges are bubbly, and the center is set (a slight wobble is fine, but it should not be wet).
  9. Evenly sprinkle the superfine white sugar over the top of the baked French toast.
  10. Kitchen Torch Method: Pass the flame of a kitchen torch 2–3 inches above the sugar until it melts, bubbles, and turns a dark amber color. Oven Broiler Method: Place the baking dish on the top oven rack directly under the broiler set to HIGH for 2–3 minutes. Watch constantly to prevent burning; remove as soon as the sugar melts into a bubbly golden crust.
  11. Let the dish rest for 5 minutes to allow the sugar top to harden into a glassy sheet before slicing.

Notes

Leftovers keep well in an airtight container in the refrigerator for up to 3 days. Reheat individual portions in an oven preheated to 325°F (160°C) for 10–12 minutes to preserve texture. Microwaving works for convenience (60 seconds on medium heat), though the crispy sugar topping will soften. Freeze un-brûléed slices wrapped in foil for up to 2 months. Reheat from frozen in the oven at 350°F for 20 minutes.
