  • ½ cup (50 g) blanched almond flour

Instructions

  1. Mix the cheesecake base. In a mixing bowl, combine the softened cream cheese, vanilla extract, and powdered sweetener. Stir with a spatula until smooth and glossy. Add the almond flour and a pinch of salt, if using, and mix again until a uniform, slightly firm dough forms. Taste and adjust sweetness if needed .
  2. Chill the mixture briefly. Line a baking tray with parchment paper. Spoon 12 rough dollops of the cheesecake mixture onto the tray—it will be too wet to roll at this stage. Place the tray in the freezer for 20–30 minutes , or until the dollops are firm enough to handle .
  3. Shape the bites. Remove the tray from the freezer. Roll each dollop into a ball using your hands. Make a small indentation in the center, press a fresh raspberry into it, and seal the cheesecake mixture around the berry. Work quickly so the mixture does not soften too much .
  4. Coat the bites. Roll each cheesecake ball in the finely chopped toasted almonds or desiccated coconut, pressing gently so the coating adheres evenly .
  5. Final chill. Return the coated bites to the baking tray. Freeze for 1–2 hours until firm, or refrigerate until ready to serve for a softer, cheesecake-like texture .
  6. Serve. If frozen, allow the bites to soften at room temperature for 5–10 minutes before eating. They are best served cold.
  7. Make-ahead & storage: Store in the refrigerator for up to 5 days or in the freezer for up to 3 months . Thaw in the refrigerator before serving for best texture .
