Phase 1: Preparation & Dredging

  2. Prepare the Chicken: If you are using chicken breasts, slice them against the grain into uniform 1-inch strips. Pat the chicken completely dry with paper towels. Why? Moisture is the enemy of crispiness.
  3. Set Up the Stations: You will need three shallow bowls. Bowl 1 (Flour): Whisk together the flour, garlic powder, onion powder, smoked paprika, salt, and pepper.
  4. Bowl 2 (Egg): Whisk the eggs, water, and hot sauce (if using) until frothy.
  5. Bowl 3 (Panko): Mix the Panko breadcrumbs, Parmesan cheese, dried parsley, and a pinch of salt.
  6. The Dredge: Working with one strip at a time, coat the chicken in the flour mixture, shaking off the excess. Dip it into the egg mixture, allowing the excess to drip off. Finally, press the chicken firmly into the Panko mixture. Crucial Step: Use your fingers to press the Panko into the chicken to ensure it sticks. Place the breaded strip on a plate. Phase 2: The Air Fryer Process
