- 1/3 cup vegetable oil, canola oil, or avocado oil (for shallow frying)
Tangy Tartar Sauce
- 1/2 cup mayonnaise
- 1 tablespoon dill pickles or gherkins, finely chopped
- 1 teaspoon capers, drained and finely chopped
- 1 teaspoon fresh lemon juice
- 1/2 teaspoon Dijon mustard
- 1 tablespoon fresh dill, finely minced
- Salt and black pepper to taste

Step 1: Whisk the Tartar Sauce

Step 2: Set Up the Breading Station
- Arrange 3 shallow bowls in a row.

- Bowl 2: Whisk the eggs with 1 tablespoon of water until smooth.
- Bowl 3: Place the Panko breadcrumbs.
Step 3: Dredge the Fish Strips
- Pat the fish strips completely dry with paper towels. (Pro-tip: Removing surface moisture guarantees the flour adheres tightly and prevents the crust from slipping off while frying).
- Physical Intensity – Medium: Take one fish strip, coat it thoroughly in the flour mixture (Bowl 1), and shake off any excess. Method A: Stovetop Shallow-Frying (Recommended)
- Heat 1/3 cup of vegetable oil in a large skillet over Medium-High Heat Intensity for 3 minutes until hot and shimmering ( $350\text{°F} / 175\text{°C}$ ).
- Carefully lay the breaded fish fingers into the hot oil without overcrowding the pan.
- Heat Intensity – Medium: Fry for 3 to 4 minutes on the first side until deep golden brown and crispy.
- Gently flip using tongs or a fish spatula and fry the second side for another 3 to 4 minutes until cooked through (internal temperature reaches $145\text{°F} / 63\text{°C}$ ).
- Transfer the fried fish fingers to a wire rack or paper towel-lined plate to drain off excess oil. Sprinkle immediately with a pinch of sea salt.
Method B: Air Fryer Option
- Preheat your air fryer to 390°F (200°C) for 3 minutes.
- Spray the air fryer basket generously with cooking spray. Arrange the fish fingers in a single layer and spray the tops with oil.
- Air fry at 390°F (200°C) for 8 to 10 minutes , flipping halfway through, until golden and crispy.
Step 5: Assemble & Toast
- Butter the bread slices generously on one side.
- Toast the buttered sides on a warm skillet over Medium Heat Intensity for 1–2 minutes until golden brown.
- Spread a generous layer of chilled tartar sauce over the bottom toasted bread slices.
- Top with shredded lettuce, then place 3 crispy fish fingers side-by-side on each piece of bread.
- Add a slice of cheese over the warm fish if desired, spread more tartar sauce on the top bread slice, close the sandwich, and press gently. Slice diagonally and serve immediately!
