- Spread 2 tablespoons of pizza sauce over half of the tortilla, leaving a small border around the edge.
- Add half of the mozzarella and half of the pepperoni.
- Sprinkle with a little Italian seasoning and optional Parmesan.
- Fold the empty half of the tortilla over the filling to create a half-moon shape.
- Repeat with the second tortilla.
- High-protein tip: For a higher-protein version, add ¼ cup cooked diced chicken or turkey to each quesadilla while keeping the filling evenly distributed.
3. Heat the skillet — 2 minutes
- Place a non-stick skillet over medium heat .
- Allow it to heat for approximately 2 minutes .
- The pan should be hot enough to brown the tortilla gradually but not so hot that the tortilla darkens immediately.
4. Cook the first side — 3–4 minutes
- Lightly brush the outside of one quesadilla with the garlic-herb butter.
- Place it butter-side down in the skillet.
- Cook over medium heat for 2–3 minutes , until the bottom is golden brown and crisp.
- Brush the top lightly with the remaining butter.
5. Flip and finish — 2–3 minutes
- Carefully flip the quesadilla with a spatula.
- Cook for another 2–3 minutes .
- The quesadilla is ready when the tortilla is golden and crisp and the mozzarella is completely melted and stretchy .
- Texture cue: Press the center gently with the spatula; it should feel firm rather than loose or watery.
6. Rest and slice — 1 minute
- Transfer the quesadilla to a cutting board and let it rest for about 1 minute .
- Cut into 3–4 wedges with a pizza cutter or sharp knife.
7. Serve
- Serve immediately with warm pizza sauce or marinara for dipping.
- For a complete high-protein meal, pair with a salad and an additional protein source such as grilled chicken or Greek-yogurt dip.
Notes
Storage: Refrigerate leftovers for 3–4 days in an airtight container. Freezing: Wrap individual quesadillas and freeze for up to 2 months. Reheating: Use an air fryer or dry skillet to restore crispness. Allergy notes: Contains wheat/gluten and milk/dairy ; some pepperoni and tortillas may contain soy or other allergens. Lower-carb option: Use a low-carb tortilla and a low-sugar pizza sauce. Higher-protein option: Add cooked chicken or turkey to the filling. Vegetable boost: Add finely sliced bell peppers, mushrooms, spinach, or onions. Flavor boost: Add fresh basil, oregano, crushed red pepper, garlic powder, or Parmesan. Crispiness tip: Keep the sauce and filling away from the tortilla’s outer edge and avoid overloading it. Cheese tip: Low-moisture mozzarella generally melts well without releasing too much water.
