Instructions
Step 1: Prepare the Potatoes
- Peel the potatoes and rinse them briefly to remove any dirt. Grate them using the large holes of a box grater or the shredding attachment of a food processor.
- For a more rustic texture, use medium-sized shreds. For a smoother pancake, grate some of the potatoes more finely.
- Place the grated potatoes in a large mixing bowl.
Step 2: Grate the Onion
- Finely grate the onion and add it to the potatoes.
- The onion provides moisture and savory flavor while complementing the natural sweetness of the potatoes. If you prefer a milder onion flavor, use half an onion instead of a whole one.
Step 3: Remove Excess Moisture
- Transfer the potato and onion mixture to a clean kitchen towel or cheesecloth.
- Gather the edges and squeeze firmly over the sink or a bowl until as much liquid as possible has been removed. This step is essential for achieving crispy pancakes.
- If you collect the liquid in a bowl, allow it to sit briefly and carefully pour off the water. A little white potato starch may remain at the bottom; you can mix that starch back into the potatoes for additional binding.
Step 4: Mix the Batter
- Return the drained potatoes and onion to the mixing bowl.
- Add the egg, flour, salt, black pepper, and optional garlic powder and parsley. Mix thoroughly until the ingredients are evenly distributed.
- The mixture should hold together when pressed. If it seems unusually wet, add another teaspoon of flour rather than adding a large amount at once.
Step 5: Heat the Skillet
- Place a large skillet over medium to medium-high heat. Add enough cooking oil to create a thin, even layer across the bottom.
- Allow the oil to heat for 1–2 minutes. A small piece of potato should sizzle when added to the pan without immediately turning dark brown.
- Maintaining the right temperature helps the pancakes form a crisp crust while cooking the potatoes inside.
Step 6: Shape the Pancakes
- Scoop approximately ¼ cup of the potato mixture for each pancake and place it carefully into the hot skillet.
- Flatten each mound gently with the back of a spatula to form a pancake approximately ½ inch thick or slightly thinner.
- Leave space between the pancakes so you can turn them easily and keep the oil temperature steady.
Step 7: Cook Until Golden
- Fry the pancakes for approximately 3–5 minutes on the first side, depending on their thickness.
- Avoid moving them too soon. Once the edges look set and the underside is golden brown, slide a spatula underneath and carefully flip each pancake.
- Cook the second side for another 3–5 minutes, until golden and cooked through. Adjust the heat if the outside browns too quickly.
Step 8: Drain the Pancakes
- Transfer the cooked pancakes to a plate lined with paper towels or, preferably, a wire rack set over a tray.
- Allow excess oil to drain briefly. If cooking in batches, add a little more oil to the pan as needed and allow it to heat before adding the next batch.
- For the crispiest results, avoid stacking the pancakes immediately while they are steaming.
Step 9: Add Butter and Seasoning
- While the pancakes are still hot, add a small pat of butter if desired. Sprinkle with a little salt or freshly ground black pepper to taste.
- You can also add chopped chives or parsley for freshness.
Step 10: Serve Immediately
- Arrange the pancakes on a warm plate and serve while the edges are crisp.
- Pair them with sour cream, Greek yogurt, applesauce, fried eggs, or a fresh salad. For a heartier meal, serve them alongside roasted vegetables or grilled chicken.
