- 8 oz (1 brick) full-fat cream cheese, softened to room temperature and cut into 1-inch cubes
- ½ cup heavy whipping cream
- 1 cup freshly grated Parmesan cheese (do not use pre-shredded bottled cheese)
- 1 tbsp Dijon mustard (adds depth and balances richness)
- 1 tsp dried Italian herb seasoning (blend of oregano, basil, thyme, and rosemary)
- ½ tsp crushed red pepper flakes (optional, for subtle warmth)
- 2 tbsp cornstarch mixed with 2 tbsp cold water (cornstarch slurry, optional for extra thickness)

1. Prepare and Season the Chicken
- Pat the chicken breasts completely dry using paper towels. Excess moisture creates steam and dilutes seasoning adherence. If breasts are unevenly thick, gently pound the thicker ends between sheets of parchment paper to achieve a uniform 1-inch thickness. Drizzle both sides with olive oil, then sprinkle evenly with kosher salt, black pepper, smoked paprika, and onion powder. Rub spices thoroughly into the meat.
2. Layer into the Crockpot
- Lightly grease the base and lower walls of a 6-quart slow cooker with non-stick cooking spray or a drop of olive oil. Lay the seasoned chicken breasts flat in a single layer along the bottom of the pot. Avoid excessive overlapping to ensure even heat penetration.
3. Whisk the Garlic Liquid Base
- In a medium bowl, whisk together the low-sodium chicken broth, minced garlic, Dijon mustard, dried Italian seasoning, and optional crushed red pepper flakes. Pour this seasoned liquid evenly around and over the chicken breasts. Scatter the cubed, room-temperature cream cheese over the top of the chicken. Do not worry about melting or fully incorporating the cream cheese at this stage; it will gently dissolve and temper as the cooker warms.
4. Slow Cooking (Intensity & Time)
- Secure the crockpot lid tightly.
- Low Heat Intensity (Recommended): Cook on LOW for 3.5 to 4 hours . Low heat gently breaks down muscle fibers, keeping lean white breast meat remarkably juicy and tender.
- High Heat Intensity: Cook on HIGH for 2 to 2.5 hours . Monitor closely during the final 30 minutes to prevent lean chicken from drying out.
- The chicken is safe and done when an instant-read meat thermometer inserted into the thickest center point registers 165°F (74°C) .
5. Finish the Cream Sauce
- Once the cook cycle completes, use clean tongs to transfer the cooked chicken breasts onto a clean plate or cutting board; tent loosely with aluminum foil to keep warm.
- Switch the crockpot setting to HIGH . Using a heatproof wire whisk, vigorously whisk the warm braising juices and softened cream cheese together inside the slow cooker bowl until completely smooth and emulsified. Whisk in the heavy whipping cream and freshly grated Parmesan cheese until the cheese melts seamlessly into the sauce.
- If a thicker gravy consistency is preferred: Whisk the cornstarch slurry (2 tbsp cornstarch blended with 2 tbsp cold water) directly into the hot sauce. Replace the lid and let bubble on HIGH for 8 to 10 minutes until glossy and thickened.
6. Add Greens and Return the Chicken
- Turn the crockpot to the WARM setting. Stir the fresh baby spinach into the hot cream sauce; the residual heat will wilt the leaves within 2 to 3 minutes. Slice the rested chicken breasts crosswise into ½-inch cutlets, or shred them coarsely using two forks. Return the chicken and any collected resting juices back into the sauce, tossing gently to coat every piece.
7. Garnish and Serve
- Sprinkle chopped fresh flat-leaf parsley and additional grated Parmesan over the top just before serving.
