- For the Brownie Base: ½ cup unsalted butter (1 stick)
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ⅓ cup unsweetened cocoa powder
- ½ cup all-purpose flour
- ¼ tsp salt
- ¼ tsp baking powder
- For the Cheesecake Layer: 24 oz (3 blocks) cream cheese, softened
- 1 cup granulated sugar
- 1 cup sour cream
- 3 large eggs
- 1 tsp vanilla extract
- ¼ cup all-purpose flour
- For the Caramel Topping: ¾ cup granulated sugar
- 2 tbsp unsalted butter
- ½ cup heavy cream, warmed
- Pinch of sea salt (optional for salted caramel)
Instructions
- Step 1: Make the Brownie Base: Preheat oven to 350°F (175°C). Grease a 9-inch springform pan and line the bottom with parchment paper. In a microwave-safe bowl, melt butter. Stir in sugar, vanilla, and eggs until smooth. Add cocoa powder, flour, salt, and baking powder. Mix just until combined. Spread batter evenly into the pan. Bake for 18–20 minutes, until set but not overdone. Let cool while you prepare the cheesecake layer.
- Step 2: Prepare Cheesecake Filling: Reduce oven temp to 325°F (160°C). In a large bowl, beat cream cheese and sugar until smooth (2–3 minutes). Add sour cream, vanilla, and flour. Beat until incorporated. Add eggs one at a time, beating on low just until blended. Pour cheesecake batter over cooled brownie base.
- Step 3: Bake the Cheesecake: Wrap the bottom of the springform pan in 2 layers of foil to prevent water from leaking in. Place the pan into a roasting pan. Fill the roasting pan with hot water halfway up the sides (water bath). Bake for 50–60 minutes, until the edges are set and the center jiggles slightly. Turn off oven, crack the door, and let cheesecake sit in oven for 1 hour. Remove and cool at room temperature for 1 hour, then refrigerate for at least 4 hours (overnight is best).
- Step 4: Make the Caramel Topping: In a saucepan over medium heat, melt sugar, stirring constantly until it turns golden amber. Add butter and stir (mixture will bubble). Slowly pour in warm cream, stirring constantly. Add a pinch of sea salt for a salted caramel version. Let cool slightly before pouring.
- Step 5: Assemble & Serve: Once cheesecake is fully chilled, pour cooled caramel sauce over the top. Let set in the fridge for 15–30 minutes before slicing. Garnish with chocolate curls, sea salt, or whipped cream (optional). Slice with a warm knife for clean edges.
