Easy and Decadent Molten Lava Cakes for Two
There is nothing quite like cutting into a warm chocolate cake and watching a rich, gooey river of molten chocolate flow onto the plate. While chocolate molten lava cakes seem like a high-end restaurant dessert, they are actually incredibly easy to make at home in under 25 minutes. This scaled-down recipe makes exactly two cakes, making it perfect for date nights, anniversaries, or late-night cravings.

What Makes the Center Molten?
Unlike some recipes that insert a frozen chocolate ganache inside, classic lava cakes achieve their molten center by being baked at a high temperature for a short time. The outside of the cake cooks and sets, while the center remains beautifully underbaked and liquid. Using high-quality chocolate is key, as it forms the entire flavor profile of the dish.
Ingredients You’ll Need
- High-Quality Semi-Sweet Chocolate (2 oz): Chopped (bars work better than chips).
- Unsalted Butter (2.5 tbsp): Melted with the chocolate.
- Egg (1 large) + Egg Yolk (1 large): The extra yolk adds richness.
- Granulated Sugar (2 tbsp): For sweetness.
- All-Purpose Flour (1.5 tbsp): Just enough to bind the cake.
- Salt & Cocoa Powder: For dusting the ramekins.
How to Make Lava Cakes
- Prep the Ramekins: Butter two 6-ounce ramekins generously. Dust the inside with cocoa powder, tapping out any excess. This prevents the cakes from sticking when flipped.
- Melt Chocolate & Butter: Melt the chopped chocolate and butter together in a microwave-safe bowl in 20-second increments, stirring until completely smooth. Let cool slightly.
- Whisk Eggs & Sugar: In a medium bowl, vigorously whisk the egg, egg yolk, sugar, and a pinch of salt until pale yellow and slightly thickened (about 1 minute).
- Combine: Gently fold the melted chocolate mixture and flour into the egg mixture until just combined. Do not overmix.
- Bake: Divide the batter between the two ramekins. Bake at 425°F (218°C) for 12 to 14 minutes. The edges should look firm, but the centers should still jiggle slightly.
- Invert and Serve: Let cool for 1 minute. Place a plate over the top of a ramekin, flip it over, and gently lift the ramekin. Dust with powdered sugar, top with vanilla ice cream, and serve immediately.
