Ingredients

For the Seasoned Ground Chicken:

  • 1 lb (450 g) ground chicken (preferably 92/8 or 93/7 blend for balanced juiciness)
  • 1 tbsp ranch seasoning powder (from a packet or homemade mix)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • ½ tsp kosher salt
  • ½ tsp freshly cracked black pepper
  • 8 small street-taco size flour tortillas (or thin yellow corn tortillas)
  • 1½ cups shredded Monterey Jack, Havarti, or sharp white cheddar cheese
  • 1–2 tbsp high smoke-point cooking oil or unsalted butter (for greasing the pan)

For the Homemade Dill Pickle Ranch:

  • ½ cup mayonnaise
  • ¼ cup sour cream or plain whole-milk Greek yogurt
  • ¼ cup dill pickles, very finely minced
  • 2 tbsp dill pickle brine (straight from the jar)
  • 1 tbsp fresh dill, finely chopped (or 1 tsp dried dill weed)
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • Pinch of kosher salt and cracked black pepper to taste

For Serving & Garnish:

  • ½ cup dill pickle chips or crinkle-cut slices
  • 1 cup finely shredded iceberg lettuce or green cabbage
  • Fresh dill sprigs for garnish
  • Optional: Thinly sliced jalapeño rounds or pickled red onions

Instructions

Step 1: Whisk the Dill Pickle Ranch

  1. In a medium mixing bowl, whisk together the mayonnaise, sour cream (or Greek yogurt), dill pickle brine, minced dill pickles, fresh dill, garlic powder, onion powder, salt, and black pepper.
  2. Whisk thoroughly until smooth and emulsified.
  3. Taste and adjust seasoning with an extra splash of pickle brine if you prefer a sharper tang.
  4. Cover and chill in the refrigerator while preparing the tacos. Chilling allows the dried and fresh aromatics to bloom into the cream base.

Step 2: Season and Portion the Chicken

  1. Place the ground chicken into a wide bowl.
  2. Sprinkle the ranch seasoning packet, garlic powder, onion powder, smoked paprika, kosher salt, and black pepper evenly over the meat.
  3. Using clean hands or a spatula, gently fold the seasonings into the ground chicken just until combined. Avoid overworking or compressing the meat to keep the cooked patties tender.
  4. Divide the meat mixture into 8 equal portions (roughly 2 ounces / 55 grams each) and shape them into loose, rustic balls.

Step 3: Heat the Pan to High Intensity

  1. Heat a heavy 12-inch cast-iron skillet, flat-top griddle, or stainless steel pan over medium-high heat for 4 to 5 minutes until noticeably hot.
  2. Lightly brush or swirl a thin coat of oil or butter across the cooking surface. You want the skillet hot enough that a drop of water sizzles and vanishes immediately.

Step 4: Smash and Sear

  1. Place 2 to 3 chicken portions onto the hot surface, spacing them at least 3 inches apart.
  2. Immediately place one mini tortilla directly on top of each portion of ground meat.
  3. Using a sturdy, flat metal burger press or heavy spatula, firmly press down directly in the center of the tortilla and rock slightly to spread the ground chicken underneath into an ultra-thin, uniform layer that reaches the very edge of the tortilla.
  4. Cook undisturbed over medium-high heat for 2 to 3 minutes. The chicken edges peeking out from beneath the tortilla will turn deeply browned, caramelized, and crisp.

Step 5: Flip and Melt the Cheese

  1. Slide a thin metal spatula completely underneath the crispy chicken patty in one decisive motion.
  2. Flip the taco so the tortilla is now flat on the hot skillet and the cooked, browned chicken faces upward.
  3. Immediately sprinkle 2 to 3 tablespoons of shredded Monterey Jack or white cheddar evenly over the hot chicken.
  4. Cook for an additional 1½ to 2 minutes over medium heat until the cheese melts thoroughly and the tortilla underneath turns golden-brown and lightly blistered.
  5. Transfer the cooked tacos to a cutting board or wire rack and repeat with the remaining portions.

Step 6: Assemble and Serve

  1. Top each warm, cheesy taco with shredded crisp lettuce and dill pickle chips.
  2. Generously drizzle the chilled dill pickle ranch over the top.
  3. Scatter fresh chopped dill over each taco and fold gently into a half-moon shape. Serve immediately while hot and crunchy.
