Ingredients

  • 1 cup (approx. 150g) baby yellow or red potatoes, diced into 1/2-inch cubes (Note: Leave skins on for extra fiber and texture)
  • 1/2 cup (approx. 85g) cooked lean ham, diced into 1/2-inch cubes
  • 3 large eggs
  • 2 tbsp unsweetened almond milk (or skim milk)

  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika

Instructions

  1. Preheat & Prep Pan: Lightly coat a 6-inch air fryer-safe dish or silicone insert with olive oil spray. Preheat your air fryer to 330°F (165°C).
  2. Crisp the Potatoes: Toss diced potatoes with 1 tsp olive oil, smoked paprika, and half the garlic powder. Place in the baking dish and air fry at 360°F (180°C) for 8 minutes, shaking halfway through until the edges are golden and fork-tender.
  3. Whisk the Egg Base: In a medium bowl, whisk together the eggs, milk, remaining garlic powder, black pepper, and green onion whites until frothy and well blended.
  4. Assemble the Bake: Scatter the diced ham and half of the cheddar cheese evenly over the par-cooked potatoes in the dish. Pour the whisked egg mixture over the top, then sprinkle the remaining cheddar cheese on surface.
  5. Air Fry to Set: Lower the air fryer temperature to 325°F (160°C). Slide the dish in and bake for 9–11 minutes until the center is set, the eggs have puffed, and the cheese is melted with light golden patches.
