Instructions

Step 2: Sauté the Beef and Onions (Medium-High Intensity)

  1. Place a large skillet over medium-high heat and add 1 tablespoon of olive oil.
  2. Add the diced yellow onion and cook for 4 to 5 minutes until soft, translucent, and starting to pick up light golden edges.
  3. Add the minced garlic and cook for 45 to 60 seconds until fragrant, stirring constantly to prevent burning.
  4. Add the ground beef, breaking it apart with a wooden spoon or meat chopper into fine, uniform crumbles. Cook undisturbed for 2 to 3 minutes to allow deep browning on the bottom, then stir and cook until no pink remains (about 5 to 7 minutes total).
  5. Drain away excess rendered grease, leaving roughly 1 to 2 tablespoons in the skillet to retain richness.

Step 3: Season and Reduce (Medium-Low Intensity)

  1. Turn the heat down to medium-low.
  2. Stir in the tomato paste, cooking it for 1 minute to remove raw acidity.
  3. Add the Worcestershire sauce, Dijon mustard, smoked paprika, onion powder, garlic powder, kosher salt, and black pepper. Mix thoroughly until the meat is uniformly coated.
  4. Pour in the ¼ cup of beef broth to deglaze the bottom of the pan, scraping up all browned bits. Simmer for 2 minutes until the liquid reduces and forms a thick, clinging sauce around the beef.
  5. Remove the skillet from the heat. Spread the beef mixture onto a plate or shallow bowl and allow it to cool for at least 10 minutes. Do not place boiling hot beef onto cold raw pastry , as the heat will melt the pastry’s laminated butter layers instantly.

Step 4: Assembly (Low Intensity)

  1. Preheat your oven to 400°F (200°C) with the oven rack positioned in the center.
  2. Lightly dust a clean counter with flour. Unroll the first sheet of puff pastry. Gently roll it with a rolling pin just enough to smooth the fold lines and expand it to roughly a 10×14-inch rectangle.
  3. Transfer the pastry onto the prepared, parchment-lined baking sheet.
  4. Arrange the slices of provolone or mozzarella across the dough, leaving a clear ½-inch border around all four edges.
  5. Evenly spread the cooled beef mixture over the cheese layer.
  6. Scatter the well-drained dill pickles over the beef.
  7. Top the beef evenly with the sharp cheddar cheese slices or shreds.
  8. Lightly brush the clean ½-inch pastry border with your prepared egg wash.
  9. Unroll and gently roll out the second sheet of puff pastry to match the dimensions of the base. Lay it squarely over the filling.
  10. Press the perimeter edges together with your fingertips to seal, then crimp firmly with the tines of a fork all the way around.

Step 5: Scoring, Glazing, and Venting (Low Intensity)

  1. Using a sharp knife, lightly score the top sheet of pastry into a 3×4 grid (12 distinct slider squares), cutting through only the top sheet of pastry without piercing through the bottom layer. This creates clear portion lines and guides steam release.
  2. Cut two small ventilation slits into the center of each scored slider square.
  3. Brush the entire top pastry surface generously with the remaining egg wash.
  4. In a small bowl, whisk the 3 tablespoons of melted butter with ½ teaspoon of garlic powder and ½ teaspoon of dried parsley. Drizzle or lightly brush half of this garlic butter over the egg wash, then sprinkle evenly with toasted sesame seeds and flaky sea salt.

Step 6: Bake to Crisp Perfection (High Heat Intensity)

  1. Transfer the baking sheet into the preheated 400°F (200°C) oven.
  2. Bake undisturbed for 25 to 30 minutes. The pastry should puff into distinct, crisp layers and turn a deep, burnished golden brown, with melted cheese bubbling lightly through the vents.
  3. If the top pastry browns too quickly before 25 minutes, loosely tent the top with a sheet of aluminum foil and continue baking to ensure the bottom pastry fully bakes through.
  4. Remove from the oven and immediately brush the hot crust with the remaining garlic herb butter.

Step 7: Resting and Slicing (Low Intensity)

  1. Allow the sliders to rest on the baking sheet for 5 to 7 minutes. This short rest allows the bubbling melted cheese and meat juices to settle, preventing the fillings from sliding out when cut. Using a large serrated knife or a sharp pizza wheel, cut cleanly along the scored lines into 12 individual sliders. Serve warm.
