Ingredients
- Thick-Cut Bacon (8 strips / approx. 8 oz): Thick-cut bacon provides plenty of rendered fat for frying the cabbage and retains a meaty crunch.
- Medium Head of Green Cabbage (approx. 2 to 2.5 lbs): Core removed and sliced into bite-sized ribbons or chops.
- Yellow Onion (1 medium): Diced finely to provide a sweet, aromatic base.
- Garlic (3 cloves): Minced for savory depth.
- Butter (2 tablespoons, unsalted): Combined with bacon drippings to create a rich glaze.
- Apple Cider Vinegar (1 tablespoon): Adds a bright splash of acidity to cut through the richness of the bacon fat.
- Smoked Paprika (1 teaspoon): Enhances the smoky profile of the bacon.
- Garlic Powder (1/2 teaspoon): Adds an extra layer of savory garlic warmth.
- Onion Powder (1/2 teaspoon): Complements the fresh onions.

Instructions
Step 1: Prep the Cabbage & Vegetables
- Intensity / Action: Prep Work (No heat)
- Time: 10–15 minutes
- Instructions: Remove any damaged outer leaves from the cabbage. Cut the head of cabbage in half, then into quarters. Cut out the tough core from each quarter. Chop the remaining cabbage into roughly 1-inch strips or bite-sized chunks. Dice the yellow onion and mince the garlic cloves. Chop the raw bacon into 1/2-inch pieces (lardons).
Step 2: Render and Crisp the Bacon
- Heat Intensity: Medium-High
- Time: 6–8 minutes
- Instructions: Place a large, deep skillet or Dutch oven over medium-high heat. Add the chopped bacon pieces. Cook, stirring occasionally, until the bacon is deep golden brown and crisp. Use a slotted spoon to transfer the crispy bacon to a paper-towel-lined plate, leaving all the rich rendered bacon grease in the skillet.
Step 3: Sauté the Aromatics
- Heat Intensity: Medium
- Time: 3–4 minutes
- Instructions: Reduce the heat to medium. Melt the 2 tablespoons of butter directly into the hot bacon fat. Add the diced yellow onions to the pan. Cook for 3 minutes until soft and translucent, scraping up any delicious browned bits ( fond ) stuck to the bottom of the pan. Add the minced garlic and cook for an additional 1 minute until fragrant.
Step 4: Add the Cabbage and Seasonings
- Heat Intensity: Medium
- Time: 8–10 minutes
- Instructions: Add the chopped cabbage into the skillet in batches if necessary—it will look like a lot at first, but it wilts down quickly. Sprinkle in the smoked paprika, garlic powder, onion powder, red pepper flakes, salt, and freshly cracked black pepper. Toss well using tongs to coat the cabbage thoroughly in the seasoned bacon fat and butter. Cover the skillet with a lid for 3 to 4 minutes to allow the cabbage to steam and soften. Remove the lid and continue cooking over medium heat, stirring every minute, until the cabbage is tender with slight caramelization on the edges.
Step 5: Brighten and Finish
- Heat Intensity: Low / Off
- Time: 2 minutes
- Instructions: Pour in the apple cider vinegar and stir vigorously to deglaze the skillet and balance the richness. Turn off the heat. Fold the reserved crispy bacon back into the cabbage, holding back a tablespoon for garnish. Taste and adjust seasoning with additional salt or black pepper if needed.
