Instructions

Step 1: Prepare the Oven

  1. Preheat your oven to 425°F (220°C).
  2. Line a large baking sheet with parchment paper or lightly coat it with non-stick cooking spray. A properly heated oven is essential for achieving crispy roasted potatoes.

Step 2: Wash and Cut the Potatoes

  1. Wash the red potatoes thoroughly under cold running water.
  2. Cut them into evenly sized chunks, approximately 1 to 1½ inches in size. Uniform pieces ensure even cooking and consistent texture.

Step 3: Season the Potatoes

  1. In a large mixing bowl, combine:
  2. Olive oil
  3. Minced garlic
  4. Rosemary
  5. Thyme
  6. Parsley
  7. Salt
  8. Black pepper
  9. Paprika
  10. Add the potato chunks to the bowl and toss until every piece is evenly coated with the seasoning mixture.

Step 4: Arrange on Baking Sheet

  1. Spread the potatoes in a single layer on the prepared baking sheet.
  2. Avoid overcrowding the pan. Leaving space between the potatoes allows hot air to circulate, helping them become crispy rather than steamed.

Step 5: Roast the Potatoes

  1. Place the baking sheet in the preheated oven.
  2. Roast for 20 minutes.
  3. After 20 minutes, remove the pan and use a spatula to flip the potatoes.
  4. Return them to the oven and continue roasting for an additional 15–20 minutes.
  5. The potatoes are done when they are golden brown, crispy on the outside, and fork-tender on the inside.

Step 6: Garnish and Serve

  1. Remove the potatoes from the oven.
  2. Sprinkle with fresh chopped parsley and optional grated Parmesan cheese.
  3. Serve immediately while hot and crispy.
