Ingredients

For the Flatbread Dough:

  • 3 cups (360g) All-purpose flour (plus extra for dusting)
  • 1 tsp Baking powder
  • 1/2 tsp Baking soda
  • 1 tsp Fine salt
  • 1 tsp Granulated sugar
  • 3/4 cup (180g) Plain Greek yogurt (or full-fat plain yogurt)
  • 1/2 cup (120ml) Warm water (adjust with 1–2 tbsp if dough feels dry)
  • 2 tbsp Olive oil or melted butter

For the Garlic Herb Butter:

  • 4 tbsp (56g) Unsalted butter, melted
  • 4 cloves Fresh garlic, finely minced or grated
  • 2 tbsp Fresh parsley, finely chopped
  • 1/4 tsp Flaky sea salt (optional, for finishing)

Instructions

Step 1: Combine the Dry Ingredients

  1. In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, fine salt, and granulated sugar until evenly distributed. Making sure the leavening agents are mixed thoroughly ensures an even rise in the skillet.

Step 2: Form the Dough

  1. Create a small well in the center of the flour mixture. Add the plain Greek yogurt, warm water, and olive oil into the well. Using a wooden spoon or a spatula, gently stir from the center outward until a rough dough begins to pull together.

Step 3: Knead Until Smooth

  1. Turn the dough out onto a lightly floured surface. Knead the dough gently by hand for 3 to 5 minutes until it forms a smooth, soft, and cohesive ball. If the dough feels overly sticky, add flour 1 tablespoon at a time; if it feels dry or shaggy, add a splash of warm water. The dough should be soft and supple, similar to the feel of an earlobe.

Step 4: Rest the Dough

  1. Shape the dough into a smooth ball, return it to the mixing bowl, and cover it with a clean kitchen towel or plastic wrap. Allow the dough to rest at room temperature for 15 to 20 minutes. Resting relaxes the gluten, making the dough much easier to roll out without springing back.

Step 5: Prepare the Garlic Herb Butter

  1. While the dough rests, prepare the garlic topping. In a small saucepan over low heat (or in a microwave-safe dish heated in 15-second intervals), melt the butter. Stir in the finely minced garlic and chopped fresh parsley. Remove from heat and set aside so the garlic can infuse its flavor into the warm butter.

Step 6: Portion and Roll the Flatbreads

  1. Divide the rested dough into 6 equal portions. Shape each portion into a smooth ball. On a lightly floured work surface, use a rolling pin to roll each ball into an oval or circle roughly 1/8-inch thick (about 7 to 8 inches in diameter).

Step 7: Cook the Flatbreads

  1. Heat a heavy cast-iron skillet or non-stick pan over medium-high heat until very hot. Lightly brush one side of a flatbread with a touch of water or a tiny swipe of melted butter.
  2. Place the flatbread into the dry, hot skillet. Cook for 1 to 2 minutes on the first side. You will see large bubbles puff up across the surface, and golden-brown spots form underneath. Flip the flatbread using tongs or a spatula and cook the second side for another 1 to 1.5 minutes until puffed and browned in spots.

Step 8: Butter and Serve

  1. Immediately upon removing the flatbread from the heat, generously brush the top surface with the prepared garlic herb butter. Transfer to a plate and cover loosely with a foil wrap or clean towel to keep warm and soft while cooking the remaining dough batches. Repeat for all flatbreads.
