Ingredients

  • 1 medium fresh onion, peeled and roughly chopped

  • 1/2 cup raw or regular honey
  • 1/2 cup fresh lemon juice

Step 1: Prepare the Ingredients

  1. Begin by peeling the onion, garlic, and ginger. Roughly chop the onion and ginger into smaller pieces so they are easier to process.
  2. Wash the lemons thoroughly. Zest one lemon if desired, then squeeze the lemons to obtain fresh juice. Remove any seeds from the juice.
  3. Fresh ingredients give this mixture its strongest flavor, so use firm ginger, fresh garlic, and fresh lemons whenever possible.

Step 2: Blend the Ginger, Garlic, and Onion

  1. Place the chopped onion, peeled garlic cloves, and sliced ginger into a food processor or blender.
  2. Pulse several times until the ingredients become finely chopped and form a chunky mixture. You do not need to make it completely smooth.
  3. If your blender needs additional liquid, add a tablespoon or two of the fresh lemon juice.
  4. Avoid blending for too long because excessive processing can make the mixture very watery.

Step 3: Add the Lemon

  1. Transfer the blended mixture to a clean bowl.
  2. Add the freshly squeezed lemon juice and stir well. If you are using a small amount of lemon zest, add it at this stage as well.
  3. The lemon helps brighten the strong garlic and onion flavors and gives the mixture its characteristic tangy taste.

Step 4: Add the Honey

  1. Pour the honey into the mixture and stir thoroughly until everything is evenly combined.
  2. Honey can be thick, especially when it is cool. If necessary, allow it to sit at room temperature for a few minutes before mixing.
  3. For a sweeter and more mellow tonic, you can add another tablespoon or two of honey according to taste.

Step 5: Transfer to a Jar

  1. Spoon the mixture into a clean glass jar with a tight-fitting lid.
  2. If the mixture is very thick, you can add up to 1/2 cup filtered water to create a more drinkable consistency. If you prefer a concentrated mixture, leave the water out.
  3. Do not fill the jar completely to the top. Leave a little space at the top for easy mixing.

Step 6: Let the Flavors Develop

  1. Cover the jar tightly and place it in the refrigerator.
  2. For the best flavor, allow the mixture to rest for approximately 12–24 hours before using it. During this time, the flavors of the ginger, garlic, onion, lemon, and honey will blend together.
  3. Give the jar a gentle stir before serving.
  4. Because this is a fresh homemade mixture rather than a commercially preserved product, keep it refrigerated and use clean utensils each time.
