Instructions
- Pat the chicken thighs completely dry with paper towels. Removing excess surface moisture is the secret weapon to achieving an ultra-crispy skin. Season both sides of the chicken thighs evenly with kosher salt, black pepper, and garlic powder.
- In a small mixing bowl, whisk together the honey, low-sodium soy sauce, minced garlic, grated ginger, rice vinegar, and sriracha (if using) until well combined. Set the sauce aside.
- Heat a large skillet or cast-iron pan over medium-high heat. Add the olive oil. Once the oil is shimmering and hot, place the chicken thighs skin-side down in a single layer.
