Ingredients
For the Salmon Patties
- 1 can salmon, about 14–15 oz, drained
- 2 large eggs
- 1/2 cup finely diced onion
- 1/2 cup breadcrumbs
- 2 tablespoons mayonnaise
- 1 tablespoon yellow mustard
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried parsley
- 1/4 teaspoon paprika
- 2 tablespoons vegetable oil, plus more if needed
Optional Ingredients
- 1 small celery stalk, finely diced
- 1 tablespoon chopped fresh parsley
- A pinch of cayenne pepper
- 1/4 teaspoon Old Bay-style seafood seasoning
- A little grated Parmesan cheese for extra flavor

Instructions
Step 1: Prepare the Salmon
- Open the can of salmon and drain it thoroughly.
- Place the salmon in a large mixing bowl.
- Remove any large bones or pieces of skin if you prefer a smoother texture. Small soft bones are edible, but removing them can make the patties more appealing to some people.
- Use a fork to gently flake the salmon.
- Don’t turn it into a completely smooth paste. Leaving some small pieces gives the patties a better texture.
Step 2: Add the Vegetables
- Add the finely diced onion to the salmon.
- If you’re using celery or fresh parsley, add those as well.
- The onion adds sweetness and flavor while giving the patties a little texture.
- For an especially tender patty, make sure the onion is diced very finely.
Step 3: Add the Binding Ingredients
- Crack the eggs into the bowl.
- Add the breadcrumbs, mayonnaise, mustard, lemon juice, salt, pepper, garlic powder, parsley, and paprika.
- Gently mix everything together with a fork or your hands until the mixture holds together.
- Don’t overmix it.
- You want the salmon to remain slightly chunky rather than becoming completely mashed.

Notes
Allow leftover salmon patties to cool before placing them in an airtight container. Refrigerate and enjoy within 3–4 days . To reheat, use a skillet or oven so the exterior can become crisp again. An air fryer can also work well for reheating. Avoid repeatedly reheating the same leftovers.
