Savory ground beef, finely diced onion and bell pepper, parsley, and mozzarella are spread over flour tortillas, rolled tightly, sliced, and baked until cooked through. Ingredients

  • 6 burrito size flour tortillas
  • 2 lbs (0.90 kg) ground beef
  • 1 small onion, fine diced
  • 1 small bell pepper, fine diced
  • 3 tbs parsely, chopped
  • 1½ cups (110 g) shredded mozzarella, divided
  • 2 tsp salt
  • 1 tsp each garlic powder + onion powder
  • 1/4 tsp paprika
  • 1 tbs olive oil, for brushing
  • For the Sauce3 tbs ketchup
  • 6 tbs mayo
  • 1/2 tsp garlic powder
  • salt, to taste

Instructions

  1. Prepare the OvenPreheat the oven to 420°F. Spray or brush a 7×11 baking dish with olive oil.
  2. Make the FillingIn a large bowl, combine the ground beef, onion, bell pepper, parsley, 1 cup shredded mozzarella, salt, garlic powder, onion powder, and paprika. Mix until everything is evenly combined.
  3. Fill the TortillasDivide the beef mixture evenly among the tortillas. Spread the mixture into a thin layer across each tortilla, reaching toward the edges as much as possible.
  4. Roll and SliceRoll each tortilla tightly. Cut the rolls into pieces about 2½ inches long
  5. Arrange and BakePlace the rolls in the prepared baking dish with the meat-filled cut side facing upward. Lightly brush the tops with olive oil.Bake for 25–30 minutes, or until the beef is cooked through and the tortillas are lightly browned.
  6. Add the CheeseSprinkle the remaining shredded mozzarella over the roll-ups. Return the dish to the oven until the cheese has melted.For a more golden top, broil for 2–3 minutes, watching closely so the cheese does not burn.
  7. Make the SauceWhisk the ketchup, mayo, garlic powder, and salt together in a small bowl until smooth
