To make these delectable pastry squares, you will need the following ingredients: Puff Pastry, Deli Ham, Cheese, Dijon Mustard, Egg, Seasoning, and Black Pepper.

Ingredients

  • 2 sheets (about 1 package) puff pastry, thawed according to package instructions
  • 8 to 10 ounces high-quality smoked or honey ham, thinly sliced
  • 2 cups freshly shredded cheese (Swiss, Gruyère, or sharp cheddar)
  • 2 tablespoons Dijon mustard
  • 1 large egg (beaten with 1 tablespoon of water for an egg wash)
  • 1 tablespoon sesame seeds, poppy seeds, or “Everything Bagel” seasoning (optional)
  • A pinch of freshly cracked black pepper

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or a silicone baking mat.
  2. Unfold your first sheet of thawed puff pastry on a lightly floured surface. Gently smooth out any creases with a rolling pin. Transfer the sheet carefully to your prepared baking sheet.
  3. Spread a thin, even layer of Dijon mustard across the base pastry, leaving a small 1/2-inch border around the edges. Evenly distribute half of your shredded cheese over the mustard. Layer the sliced deli ham flat across the cheese, folding or cutting pieces to fit evenly without overlapping too thickly. Top the ham with the remaining shredded cheese and a pinch of black pepper.
  4. Unfold the second sheet of puff pastry and place it directly over the filling stack. Gently press down the edges to seal the layers together. For a clean look, you can trim the edges with a sharp knife or pizza cutter.
  5. Brush the top pastry sheet generously with your egg wash. Sprinkle your choice of seeds or seasoning across the top. Using a sharp knife, gently score the top pastry sheet into 12 equal squares (cut all the way through or score deeply so they pull apart easily after baking).
  6. Bake in the preheated oven for 20 to 25 minutes, or until the pastry has puffed up significantly, turned a deep golden brown, and the cheese is completely melted and bubbling inside.
  7. Remove from the oven and let the pastry cool on the baking sheet for 5 minutes. Slice along your scored lines and serve warm!
