Ingredients

The Base

The Whipped Spread

  • 1/2 tsp onion powder

The Filling Layers

  • 12 oz (340 g) deli ham , very thinly sliced or shaved (Honey ham, Black Forest, or smoked Virginia ham)
  • 1 1/2 cups (150 g) sharp cheddar cheese or Swiss cheese , freshly and finely shredded
  • 4 medium green onions (scallions) , white and light green parts only, finely minced
  • Optional add-in: 2 tbsp finely diced pickled jalapeños or sweet relish , pressed completely dry with paper towels

Instructions

Step 1: Prep and Whip the Spread

  1. Place the room-temperature cream cheese into a medium mixing bowl.
  2. Add the sour cream, Dijon mustard, garlic powder, onion powder, smoked paprika, black pepper, and kosher salt.
  3. Beat on medium speed using a hand mixer for 90 to 120 seconds until the mixture is uniform, aerated, and completely smooth with zero lumps.
  4. Fold in the finely minced green onions (and optional dry jalapeños/relish) using a silicone spatula until evenly distributed.

Step 2: Lay Down the Tortilla Base

  1. Lay the four flour tortillas flat on a clean, dry work surface.
  2. Divide the whipped cream cheese spread evenly across all four tortillas (roughly 3 to 4 rounded tablespoons per tortilla).
  3. Using an offset spatula, spread the mixture all the way to the very edges of each tortilla. Leaving bare edges will prevent the roll from sealing securely when chilled.

Step 3: Layer the Ham and Cheese

  1. Pat the deli ham slices thoroughly with paper towels to absorb excess brine or moisture. Moisture is the leading cause of soggy pinwheels.
  2. Distribute the ham in an even, single overlapping layer over the cream cheese base, leaving roughly 1/2-inch border bare at the top edge of each tortilla.
  3. Sprinkle the shredded sharp cheddar evenly across the ham layer. Lightly press the shredded cheese into the ham with your palms so it nests into the surface and does not roll out during the next step.

Step 4: Roll and Seal

  1. Starting from the edge closest to you, fold the bottom rim tightly over the filling.
  2. Roll forward snugly, applying even, gentle pressure along the length of the cylinder. Keep the roll as tight as possible without tearing the tortilla.
  3. When reaching the top border, ensure the exposed cream cheese creates an adhesive seal against the tortilla surface.

Step 5: Chill for Structural Stability

  1. Tear four sheets of plastic cling wrap. Place each rolled tortilla onto a sheet.
  2. Wrap each roll tightly, twisting the excess wrap on both ends like a candy wrapper to compress the roll into a uniform cylinder.
  3. Place the wrapped rolls seam-side down onto a flat baking sheet or plate.
  4. Transfer to the refrigerator for a minimum of 2 hours, or up to 24 hours. Do not skip this step. Chilling solidifies the cream cheese fats and locks the layers together, allowing clean, round slices without smushing.

Step 6: Slice and Platter

  1. Remove the rolls from the refrigerator. Unwrap one roll at a time on a sturdy cutting board.
  2. Using a razor-sharp chef’s knife or a fine-toothed serrated knife, trim off the uneven, unfilled ends (about 1/2 inch from each side).
  3. Slice the remaining roll into 3/4-inch to 1-inch rounds using a gentle sawing motion with light downward pressure. Wipe the knife blade with a damp paper towel every 2 to 3 cuts to prevent cream cheese smears across the clean edges.
