Chocolate crepes are a delicate, thin, and chocolate-rich variation of the classic French-style crepe. They have a soft texture, gentle cocoa flavor, and subtle sweetness that makes them suitable for breakfast, brunch, dessert, or an afternoon treat. Because the crepes themselves are not overly sweet, they work beautifully with a wide variety of fillings, including chocolate spread, homemade chocolate sauce, bananas, strawberries, and whipped cream.

Instructions
- Prepare the Dry Ingredients: Place the all-purpose flour, unsweetened cocoa powder, sugar, and salt in a large bowl. Sift the ingredients together to distribute the cocoa powder evenly and remove lumps.
- Prepare the Wet Ingredients: In another bowl, whisk together the eggs, milk, vanilla extract, and melted butter. If using the optional melted dark chocolate, incorporate it into the wet mixture once it has cooled slightly.
- Combine the Batter: Gradually pour the wet ingredients into the dry ingredients while whisking continuously. Continue mixing until the batter becomes smooth and lump-free. If small lumps remain, strain the batter through a fine sieve or blend it for approximately 10 seconds.
- Rest the Batter: Cover the batter and allow it to rest for 20–30 minutes. This resting period helps create a smoother batter and contributes to softer crepes.
- Heat the Pan: Place an 8–10-inch non-stick pan over medium heat. Lightly grease the surface with butter. Wipe away excess butter with a tissue or paper towel so that only a thin coating remains.
- Cook the Crepes: Pour approximately ¼ cup of batter into the center of the pan. Immediately tilt and swirl the pan to spread the batter into a thin, even circle. Cook for approximately 1–2 minutes, or until the edges begin lifting from the pan. Carefully flip the crepe. Cook the second side for approximately 30–40 seconds. Transfer the cooked crepe to a plate and repeat with the remaining batter.
- Fill the Crepes: Choose your preferred filling. For chocolate spread, spread the chocolate hazelnut spread over the warm crepe. For chocolate sauce, drizzle or spread the sauce over the crepe and add fruit if desired. For a fruit version, add sliced bananas, strawberries, and whipped cream.
- Fold or Roll: Fold the crepe into a half-moon, shape it into a triangle, or roll it into a cylinder. Arrange the finished crepes on serving plates.
- Garnish and Serve: Finish with powdered sugar, melted chocolate, fresh strawberries, banana slices, crushed nuts, or a scoop of vanilla ice cream. Serve while warm or at a comfortable serving temperature.
- Homemade Chocolate Sauce Instructions: Place the chopped dark chocolate, cream, and butter together. Warm gently while stirring until the chocolate melts and the mixture becomes smooth. Add the optional sugar if additional sweetness is desired. Remove from the heat and use while warm and pourable.
Notes
The batter should be thin, similar to milk or light cream. Resting the batter for 20–30 minutes helps produce softer crepes. Medium heat is preferable to high heat. The first crepe may not look perfect, which is completely normal. Avoid overcooking because excessive cooking can make the crepes crisp rather than soft. Use only a thin layer of butter when greasing the pan. Swirl the batter immediately after pouring it into the pan. If the batter has lumps, strain or briefly blend it before cooking. Chocolate spread can be applied while the crepe is still warm. Bananas and strawberries provide a fresh contrast to the chocolate flavor.
