Classic Pickled Vegetable Slaw is a fresh, crunchy, and creamy homemade side dish that brings together simple vegetables with a unique flavor-building technique. Unlike ordinary coleslaw recipes that combine raw vegetables directly with dressing, this version uses a quick pickling method to create a better balance of sweetness, acidity, and texture. The short pickling process allows the vegetables to absorb a light tangy flavor while releasing extra moisture, helping the final slaw stay crisp and creamy instead of becoming watery.
Ingredients
- 200 g fresh white cabbage or green cabbage, finely shredded
- 200 g carrots, freshly shredded
- 70 g red onion, thinly sliced
- 150 ml white wine vinegar
- 80 g granulated sugar
- 150 g mayonnaise
- Salt, according to taste
- Freshly ground black pepper, according to taste
- Optional: 2 tablespoons fresh parsley, chopped
- Optional: 1 tablespoon fresh dill, chopped
- Optional: 1 teaspoon Dijon mustard
- Optional: ½ teaspoon celery seeds

Instructions
- Wash all vegetables thoroughly under cold water. Remove damaged outer leaves from the cabbage and slice it into thin, even strips. Peel the carrots and shred them using a grater or food processor. Slice the red onion into very thin pieces so it blends well with the other vegetables. Place all prepared vegetables into a large mixing bowl.
- Sprinkle the sugar evenly over the vegetables. Pour the white wine vinegar over the cabbage, carrots, and onions. Using clean hands or salad tongs, gently mix everything together until the vegetables are evenly coated.
- Allow the vegetables to rest for approximately 30 minutes. During this time, the vinegar and sugar mixture will soften the vegetables slightly while creating a sweet and tangy flavor.
- After resting, transfer the vegetable mixture into a colander. Press gently to remove as much liquid as possible. For an even better texture, gently squeeze the vegetables with clean hands before returning them to the mixing bowl.
- Place the drained vegetables back into a dry mixing bowl. Add the mayonnaise and mix gently until all vegetables are evenly coated. Avoid mixing too aggressively because keeping the vegetable pieces intact helps maintain the crunchy texture.
- Add salt and freshly ground black pepper according to your taste. If using optional ingredients such as herbs, mustard, or celery seeds, add them at this stage. Mix carefully until the flavors are evenly distributed.
- For the best flavor, cover the slaw and refrigerate for 15–20 minutes before serving. This resting time allows the creamy dressing and pickled vegetables to combine beautifully. Serve chilled for the freshest texture.
Notes
Store leftover slaw in an airtight container in the refrigerator for up to 5 days. Before serving again, stir gently to redistribute the dressing. Freezing is not recommended as the mayonnaise dressing may separate and vegetables may lose texture. Use fresh, firm cabbage for maximum crunch and drain pickled vegetables completely before adding mayonnaise.
