Homemade banana pudding is a classic dessert that brings together creamy vanilla custard, sweet bananas, and tender vanilla wafers in one irresistible dish. Making the pudding from scratch gives this dessert a rich texture and a fresh vanilla flavor that makes it feel extra special, while the preparation itself remains simple enough for a relaxed weekend treat. The secret to a delicious banana pudding is allowing enough time for the layers to chill together.

Ingredients

  • 2½ cups whole milk
  • ½ cup heavy cream
  • 1 large egg
  • 2 egg yolks
  • ¾ cup granulated sugar
  • 4½ tablespoons cornstarch
  • 4 tablespoons butter, cut into small pieces
  • 3 teaspoons vanilla extract
  • ½ teaspoon salt
  • 1 box vanilla wafers
  • 4 large ripe but firm bananas
  • Fresh whipped cream, as needed
  • Extra banana slices or vanilla wafers for decoration, optional

Instructions

  1. Pour the whole milk and heavy cream into a medium saucepan. Place the saucepan over medium heat and stir occasionally. Warm the mixture until it becomes hot and begins to form small bubbles around the edges. Once the mixture is hot, reduce the heat to low.
  2. In a separate mixing bowl, combine the egg, egg yolks, granulated sugar, and cornstarch. Whisk thoroughly until the mixture becomes smooth and there are no visible lumps of cornstarch.
  3. Slowly add a small amount of the hot milk mixture to the egg mixture while whisking continuously. Repeat this process gradually until the egg mixture has warmed considerably.
  4. Once the egg mixture has been tempered, slowly pour it back into the saucepan containing the remaining milk. Place the saucepan over medium-low heat. Whisk continuously as the mixture cooks until the pudding thickens enough to coat the back of a spoon (approx. 5–8 minutes).
  5. Remove the saucepan from the heat. Immediately add the butter, vanilla extract, and salt. Stir until the butter has completely melted and the mixture becomes smooth.
  6. Pour the warm custard through a fine-mesh strainer into a clean container to remove any tiny pieces of cooked egg or small lumps of cornstarch.
  7. Place plastic wrap directly against the surface of the warm pudding to prevent a skin from developing. Refrigerate the pudding for at least 1 hour, or until completely chilled. Remove the plastic wrap and whisk or stir the pudding until smooth.
  8. Peel the bananas and slice them into even rounds approximately ¼ inch thick.
  9. Arrange a layer of vanilla wafers across the bottom of a 9-inch square baking dish, trifle bowl, or large serving dish.
  10. Arrange sliced bananas over the vanilla wafers, distributing them evenly.
  11. Spoon approximately half of the chilled vanilla pudding over the banana layer and spread it gently to cover the bananas and cookies completely.
  12. Add another layer of vanilla wafers, followed by another layer of banana slices. Spread the remaining pudding evenly over the top.
  13. For a simple finish, arrange several vanilla wafers around the top or crush a few and sprinkle the crumbs over the surface.
  14. Cover the assembled banana pudding tightly with plastic wrap. Place it in the refrigerator for at least 4 hours to allow the wafers to soften and flavors to blend.
  15. Before serving, add fresh whipped cream by spreading a thin layer over the top or piping decorative swirls across the surface.

Notes

Prep Time: 15 minutes. Cook Time: 15 minutes. Chilling Time: At least 4 hours. Total Time: Approximately 4 hours 30 minutes. Servings: About 9. Difficulty: Easy to moderate. Use ripe but firm bananas to prevent them from becoming mushy. Whisk the custard continuously to prevent lumps and sticking. Temper the eggs carefully by adding hot milk gradually. The assembled banana pudding is generally best enjoyed fresh rather than frozen, but the homemade custard can be frozen separately in a suitable freezer-safe container. Store leftover banana pudding in the refrigerator in a tightly covered container and enjoy within a couple of days.
