Healthy Strawberry Kiwi Drink

A refreshing homemade drink with bright fruit flavor, this Strawberry Kiwi Drink is an easy option that comes together with very little effort. Fresh strawberries and kiwi are blended with coconut water and a small amount of salt, then strained to create a smooth fruit mixture. The drink is finished with sparkling water or ginger ale and served over ice for a light, fizzy beverage.

Ingredients

  • 1 cup fresh strawberries, hulled
  • 2 kiwis, peeled and cut into big chunks
  • 2 cups coconut water
  • ¼ teaspoon Redmond’s sea salt or pink Himalayan sea salt
  • Optional: 1 teaspoon honey
  • Sparkling water or ginger ale for topping
  • Strawberry and kiwi slices for garnish

Instructions

  1. Wash the strawberries thoroughly and remove the green tops. Place the prepared strawberries into a blender.
  2. Peel the two kiwis and cut them into large chunks. Add the kiwi pieces to the blender with the strawberries.
  3. Pour 2 cups of coconut water into the blender.
  4. Measure ¼ teaspoon of Redmond’s sea salt or pink Himalayan sea salt and add it to the blender. If you want additional sweetness, add 1 teaspoon of honey.
  5. Secure the blender lid and blend on high for approximately 20 seconds until the strawberries and kiwi have been thoroughly broken down and the mixture looks evenly combined.
  6. Place a fine-mesh strainer over a large jar, bowl, or measuring cup. Pour the blended fruit mixture through the strainer. Use a spoon to gently press the mixture through the mesh to separate most of the seeds and pulp. (Skip this step for a more textured beverage).
  7. Fill two serving glasses with ice. Pour the strained strawberry kiwi mixture over the ice, dividing it evenly between the glasses, leaving room near the top for the carbonated topping.
  8. Top each glass with sparkling water or ginger ale. Add the carbonated liquid slowly to prevent excessive foaming. Give each drink a gentle stir.
  9. Add a few strawberry and kiwi slices to each glass. Serve immediately while the drink is cold and fizzy.

Notes

Use ripe strawberries for the best natural sweetness. Fresh strawberries are preferred, although frozen strawberries can also be used. Peel the kiwi before blending. Measure the salt rather than adding it by eye. Honey is optional and can be omitted. Use sparkling water for a lighter, less sweet beverage or ginger ale for additional sweetness and ginger flavor. Add sparkling water or ginger ale only after blending and straining. Strain the drink for a smoother texture or skip straining if you prefer additional fruit pulp. The fruit pulp left behind can be added to smoothies. Refrigerate the prepared fruit mixture for up to 5 days or freeze for up to 3 months. Do not add sparkling water or ginger ale before storage because carbonation will be lost. Garnish with fresh strawberry and kiwi slices immediately before serving. Serve over plenty of ice for the most refreshing result. If the fruit tastes particularly tart, add the optional teaspoon of honey. If the drink is too strong, dilute it with additional sparkling water. If you prefer stronger fruit flavor, use less sparkling water when serving.
