A no-bake dessert featuring a protein-rich banana pudding base layered with vanilla wafers and fresh bananas. This recipe yields 4 individual pudding cups and requires low difficulty with a total time of 2 hours and 20 minutes, including chilling.

Ingredients

  • 1 cup (240g) Low-fat or 0% Fat Greek Yogurt (Plain or Vanilla)
  • 1 cup (240ml) Unsweetened Almond Milk (or milk of choice)
  • 1 scoop (approx. 30g) Vanilla Whey or Casein Protein Powder
  • 1 packet (approx. 28g / 1 oz) Instant Banana Cream Pudding Mix (Sugar-Free)
  • 1 medium ripe banana (mashing into the base)
  • 2 medium ripe bananas, thinly sliced
  • 24 mini Vanilla Wafers (or high-protein / reduced-fat wafers)
  • 1/2 cup Light Whipped Topping (e.g., Cool Whip Lite or homemade whipped cream)
  • Optional Garnish: Crushed wafer crumbs, extra banana slice, or a pinch of ground cinnamon

Instructions

  1. In a high-speed blender or food processor, combine 1 ripe banana, 1 cup Greek yogurt, and 1 cup unsweetened almond milk. Blend on high for 30–45 seconds until completely smooth and lump-free.
  2. Pour the blended banana liquid into a medium mixing bowl. Add 1 scoop vanilla protein powder and 1 packet sugar-free instant banana pudding mix. Whisk vigorously for 1 to 2 minutes until the mixture thickens into a glossy, smooth pudding consistency. Set aside for 5 minutes to firm up.
  3. Arrange 4 glass dessert cups or jars on your counter. Assemble the layers in order: Place 3 mini vanilla wafers in the bottom of each glass. Add a layer of sliced fresh bananas over the wafers. Spoon about 1/4 cup of the protein pudding mixture into each glass. Repeat: Add 3 more mini wafers, another layer of sliced bananas, and top with the remaining protein pudding.
  4. Spoon 2 tablespoons of light whipped topping onto each cup. Cover the jars loosely with plastic wrap or lids and place them in the refrigerator for at least 2 hours (or overnight) to allow the vanilla wafers to soften slightly into that classic, cake-like pudding texture.
  5. Just before serving, top each cup with a fresh slice of banana and a sprinkle of crushed vanilla wafer crumbs. Serve chilled.

Notes

Protein Choice Matters: Casein or a Whey/Casein blend yields a thicker, creamier texture than pure Whey isolate. If using 100% Whey isolate, reduce the milk by 2 tablespoons to maintain a thick consistency. Prevent Banana Browning: Toss your fresh banana slices in 1 teaspoon of fresh lemon juice or pineapple juice before assembling. The mild acid prevents oxidation without altering the sweet taste. Soft vs. Crunchy Wafers: If you like soft, cake-like vanilla wafers, let the cups chill in the fridge overnight. If you prefer a crunch, assemble and serve within 30 minutes. Storage: Store covered in the refrigerator for up to 3–4 days. Freezing is not recommended, as freezing changes the texture of the Greek yogurt pudding base and causes the bananas to break down when thawed.
