Ingredients
For the Beef & Peppers:
- 1.5 lbs (680g) Lean Ground Beef (93/7 preferred)
- 1 large Yellow Onion (diced)
- 1 large Red Bell Pepper (sliced into strips)
- 1 large Green Bell Pepper (sliced into strips)
- 4 cloves Garlic (minced)
- 1 tbsp Avocado Oil (or Olive Oil)
The Seasoning Blend (The “Umami Mix”):
- 2 tsp Smoked Paprika (essential for depth)
- 1 tsp Chili Powder
- 1 tsp Onion Powder
- 1 tsp Garlic Powder
- ½ tsp Ground Cumin
- Salt & Black Pepper (to taste)
The Creamy Cheese Sauce:
- 1 cup (240ml) Beef Broth (low sodium)
- 4 oz (113g) Cream Cheese (softened, cut into cubes)
- 1 cup (100g) Sharp Cheddar Cheese (freshly shredded—do not use pre-shredded, it won’t melt smoothly)
- ½ cup (120g) Plain Greek Yogurt (or Sour Cream for a richer taste)
- 1 tbsp Worcestershire Sauce

Phase 1: The Foundation (Searing the Beef)
- Heat the Pan: Place a large, heavy-bottomed skillet or cast-iron pan over Medium-High heat . Add the avocado oil and let it shimmer.
- Sear the Beef: Add the ground beef to the pan. Let it cook undisturbed for 3-4 minutes to get a good brown crust. This is where the flavor builds. Use a spatula to break the meat into large chunks. Cook for 6-8 minutes until fully browned and no longer pink.
- The Mirepoix Move: Push the beef to one side of the pan. Reduce heat to Medium . Add the diced onion and bell peppers to the empty side. Sauté for 5-6 minutes until the onions become translucent and the peppers start to soften and blister slightly. Add the minced garlic and cook for 1 minute until fragrant.
- Combine & Season: Mix the vegetables into the beef. Sprinkle the “Seasoning Blend” (Smoked Paprika, Chili Powder, Onion Powder, Garlic Powder, Cumin, Salt, and Pepper) over the mixture. Stir well to coat everything in the spices. Cook for 1 minute to “bloom” the spices (this releases their oils and enhances the flavor).
Phase 2: The Sauce (Creating the Magic)
- Deglaze: Pour the beef broth into the skillet. Scrape the bottom of the pan with your spatula to lift all the browned, flavorful bits (fond) stuck to the pan. Bring the liquid to a simmer.
- Cream Cheese Integration: Reduce heat to Medium-Low . Add the cubed cream cheese to the skillet. Stir continuously for 2-3 minutes until the cream cheese has completely melted into the broth, creating a thick, creamy base.
- Cheese Pull: Turn the heat down to Low . Add the shredded sharp cheddar cheese in three batches, stirring constantly. Allow each handful to melt completely before adding the next. This ensures a smooth, non-grainy sauce.
- Final Creaminess: Turn off the heat entirely. Stir in the Greek Yogurt (or sour cream) and Worcestershire sauce. The residual heat from the pan is enough to warm this through without curdling the yogurt. Stir until the sauce is glossy, thick, and clinging to the beef and peppers.
Phase 3: Rest & Serve
- Rest: Let the pan sit on the stove (off the heat) for 2 minutes. This allows the sauce to set slightly.
- Serve: Spoon a generous portion into a bowl. Garnish with fresh herbs and red pepper flakes if desired.
