Instructions
- Beat the heavy whipping cream in a large bowl with an electric mixer on high speed until it begins to thicken. Gradually pour in the sweetened condensed milk while continuing to mix. Add the cream cheese cubes one at a time and beat until the mixture becomes thick and fluffy.
- Cover the bottom of a 13×9-inch baking dish with a single layer of graham crackers. Use six full sheets and one half sheet broken horizontally as needed. Spread about 1 1/2 cups of the cheesecake mixture evenly over the crackers.
- Add another layer of graham crackers followed by another 1 1/2 cups of cheesecake mixture. Repeat the layering process twice more until all of the cheesecake mixture has been used.
- Crush the remaining 1/2 graham cracker into crumbs using a zip-top bag and a rolling pin or your hands. Sprinkle the crumbs over the top, then scatter the sliced strawberries evenly across the surface. Cover the dish with plastic wrap and refrigerate for 2 hours, or until the graham crackers have softened.
- If desired, garnish with mint sprigs before serving. Keep the dessert refrigerated and store any leftovers in the refrigerator for up to 4 days.
