Ingredients

For the Cauliflower & Batter

  • 1 large head Cauliflower , cut into bite-sized bite-size florets (approx. 5–6 cups)
  • $\frac{1}{2}$ cup All-Purpose Flour (or gluten-free 1:1 baking flour)
  • $\frac{1}{4}$ cup Cornstarch (key for extra crispness)
  • $\frac{1}{2}$ cup Unsweetened Milk (dairy or plant-based like almond or oat)
  • $\frac{1}{4}$ cup Water (adjust slightly if batter is too thick)
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • $\frac{1}{2}$ tsp Smoked Paprika
  • $\frac{1}{2}$ tsp Kosher Salt
  • $\frac{1}{4}$ tsp Black Pepper
  • 1 cup Panko Breadcrumbs (placed in a separate shallow bowl)
  • Cooking Oil Spray (Avocado oil or olive oil spray)

For the Honey Sriracha Glaze

Instructions

  1. Preheat your air fryer to $400^\circ\text{F}$ ( $200^\circ\text{C}$ ) for 3 to 5 minutes. Wash and dry the head of cauliflower thoroughly. Cut into uniform, bite-sized florets. Tip: Keeping florets roughly equal in size ensures they cook through evenly without burning.
  2. In a medium bowl, whisk together the flour, cornstarch, garlic powder, onion powder, smoked paprika, salt, black pepper, milk, and water until smooth. The consistency should resemble pancake batter. In a separate shallow dish, pour out the panko breadcrumbs.
  3. Dip each cauliflower floret into the batter, letting any excess drip off. Roll the battered floret in the panko breadcrumbs, pressing gently so the crumbs adhere completely. Repeat until all florets are coated.
  4. Lightly spray the air fryer basket with cooking spray. Arrange coated florets in a single layer with space between them—do not overcrowd. Generously spray the tops of the cauliflower with cooking oil spray. Return glazed wings back into the air fryer basket in a single layer.
