Instructions

1. Preheat and Prepare Base (Intensity: Low)

  1. Preheat your oven to 180°C (350°F) . Lightly grease your baking dish with olive oil . Spread half of the sliced onion and minced garlic across the bottom. This creates a flavorful base layer that infuses the vegetables during baking.

2. Slice Vegetables (Intensity: Medium Skill)

  1. Using a mandoline or sharp knife, slice all vegetables into thin, even rounds. Consistency is important so everything cooks evenly. The ideal thickness is about 2–3 mm.
  2. Keep each vegetable type separate to make layering easier.

3. Seasoning Mix (Intensity: Low)

  1. In a small bowl, mix:
  2. olive oil
  3. Salt
  4. Black pepper
  5. thyme
  6. Stir well until emulsified. This will be brushed between layers for even seasoning.

4. Layering the Tian (Intensity: High Attention to Detail)

  1. Begin arranging the sliced vegetables vertically or slightly tilted in overlapping rows. Alternate colors and textures for a visually appealing pattern:
  2. potato
  3. carrot
  4. beetroot
  5. sweet potato
  6. Continue until the dish is tightly packed. The tighter the arrangement, the better the final texture holds together.
  7. Between every few layers, lightly brush or drizzle the olive oil seasoning mix. This ensures moisture and flavor penetrate evenly.

5. Cover and Bake (Intensity: Low Monitoring)

  1. Cover the dish tightly with foil or a lid. Place it in the oven and bake for 45 minutes .
  2. During this stage, the vegetables steam and begin softening without drying out.

6. Uncover and Roast (Intensity: Medium Heat Control)

  1. Remove the foil and continue baking for 20–30 minutes . This step allows the top layers to caramelize slightly.
  2. If using parmesan cheese , sprinkle it on top during the last 10–15 minutes for a golden crust.
  3. Check tenderness by inserting a knife—vegetables should be soft but not mushy.

7. Resting Period (Intensity: Low)

  1. Once removed from the oven, allow the Tian to rest for 10–15 minutes . This helps the layers settle and makes slicing easier.
