A nutrient-rich beverage made from fresh fruits and vegetables, including beetroot, carrots, and ginger, designed to be part of a balanced eating pattern.

Ingredients

  • 1 medium beetroot, peeled and chopped
  • 2 medium carrots, peeled and chopped
  • 1 cucumber, chopped
  • 1 green apple, cored and chopped
  • 2 celery stalks, chopped
  • 1-inch piece fresh ginger, peeled
  • Juice of 1 lemon
  • ¼ cup fresh parsley leaves
  • 1 cup cold water (if using a blender)
  • Ice cubes, for serving (optional)

Instructions

  1. Wash all produce thoroughly under running water. Peel the beetroot, carrots, and ginger if desired. Chop the beetroot, carrots, cucumber, apple, and celery into pieces that fit your juicer or blender.
  2. If using a juicer: Feed the beetroot, carrots, cucumber, apple, celery, ginger, and parsley through the juicer. Stir in the fresh lemon juice after juicing.
  3. If using a blender: Add all chopped ingredients, parsley, lemon juice, and water to the blender. Blend on high speed for about 1–2 minutes until smooth. For a smoother juice, strain through a fine-mesh sieve or cheesecloth.
  4. Pour the juice into serving glasses over ice, if desired. Stir well before serving and enjoy immediately.

Notes

Use fresh, firm produce for the best taste. Chill ingredients before blending for a naturally cold juice. Drink soon after preparation for maximum nutrient retention. Adjust ginger to taste. Optional add-ins include fresh mint, spinach, kale, turmeric, chia seeds, or coconut water. Store in an airtight glass container in the refrigerator for up to 24 hours.
