- Combine the 2 cups of chocolate cookie crumbs, 2 tablespoons of granulated sugar, and 1/2 cup of melted butter in a medium mixing bowl. Stir with a fork until the mixture resembles wet sand.
- Pour the crumb mixture into the bottom of a 9×13-inch baking dish (or a 9-inch springform pan). Using the bottom of a flat-bottomed measuring cup, press the crumbs firmly and evenly across the bottom and slightly up the sides.
- Place the crust pan into the refrigerator for 15 minutes to firm up while you prepare the filling.
- In a large standalone mixing bowl, beat the 16 ounces of softened cream cheese, 1 cup of powdered sugar, and 2 teaspoons of vanilla extract on medium-high speed for 3 minutes until completely smooth, creamy, and free of lumps.
- Add the 1/3 cup of unsweetened cocoa powder into the cream cheese mixture and beat on medium speed until fully incorporated.
- In a separate chilled bowl, whip the 2 cups of cold heavy whipping cream on high speed until stiff peaks form.
- Gently fold the whipped cream into the chocolate cream cheese mixture using a rubber spatula until a uniform, airy, chocolate mousse-like filling forms.
- Scoop the rich chocolate cream filling over your chilled cookie crust. Smooth out the top surface carefully using an offset spatula.
- Place the dish back into the refrigerator for 2 hours to let the filling set its structure before adding the ganache.
- In a small microwave-safe bowl, heat the 1/2 cup of heavy whipping cream for 45 seconds until hot and steaming (do not boil).
- Pour the hot cream directly over the 1 cup of semi-sweet chocolate chips and 1 tablespoon of butter in a bowl. Let it sit undisturbed for 2 minutes to allow the chocolate to melt from the heat of the cream.
- Whisk the mixture starting from the center outward until a glossy, smooth, velvety chocolate ganache forms. Let it cool for 5 minutes.
- Pour the cooled ganache gently over the chilled chocolate cream layer, tilting the dish so it coats the top evenly.
- Return the dessert to the refrigerator for at least 2 more hours (or overnight) until the ganache is set and the dessert is firm enough to slice cleanly.
- Run a sharp knife under warm water, wipe it dry, and slice into clean squares. Serve chilled straight from the refrigerator.
