Instructions

1. Brown the Meat (High Heat – 5 to 7 minutes)

  1. Heat olive oil in a large pot over medium-high heat. Add the ground beef and cook until browned, breaking it apart with a spoon. This step builds the base flavor, so let the meat develop a slight caramelization. Drain excess fat if necessary.

2. Sauté Aromatics (Medium Heat – 5 minutes)

  1. Add chopped onions and cook until translucent. Stir in the garlic and cook for another minute until fragrant. This creates a flavorful foundation for the soup.

3. Add Vegetables (Medium Heat – 5 minutes)

  1. Stir in carrots, celery, and potatoes (if using). Let them cook for a few minutes to slightly soften and absorb the flavors.

4. Build the Broth (Low to Medium Heat – 2 minutes)

  1. Add tomato paste and mix well. Then pour in diced tomatoes and beef broth. Stir to combine all ingredients evenly.

5. Add Cabbage & Seasoning (Medium Heat – 5 minutes)

  1. Add the chopped cabbage, paprika, thyme, salt, pepper, bay leaf, and chili flakes. Stir well so everything is coated in the broth and seasoning.

6. Simmer (Low Heat – 25 to 30 minutes)

  1. Bring the soup to a gentle boil, then reduce heat to low. Cover and let it simmer until the cabbage is tender and the flavors meld together beautifully.

7. Final Taste & Serve (Low Heat – 2 minutes)

  1. Taste the soup and adjust seasoning if needed. Remove the bay leaf before serving. Garnish with fresh parsley for a burst of freshness.
