Ingredients

For the Roasted Sweet Potato Base:

  • 4 medium Sweet Potatoes (approx. 8–10 oz each), thoroughly washed and scrubbed clean
  • 1 tbsp Extra Virgin Olive Oil
  • 1/2 tsp Fine Sea Salt

For the Seasoned Chickpea Topping:

  • 1 can (15 oz) Chickpeas (Garbanzo Beans) , rinsed, drained, and thoroughly patted dry
  • 1 tbsp Extra Virgin Olive Oil
  • 1 tsp Ground Cumin
  • 1/2 tsp Smoked Paprika
  • 1/2 tsp Garlic Powder
  • 1/4 tsp Dried Oregano
  • 1/4 tsp Kosher Salt & Freshly Cracked Black Pepper (to taste)

For the Fresh Mediterranean Salad Topping:

  • 1 cup English Cucumber , diced small
  • 1 cup Cherry Tomatoes , diced or quartered
  • 1/4 cup Red Onion , finely minced
  • 1/4 cup Kalamata Olives , pitted and sliced
  • 1/2 cup Feta Cheese , crumbled (use vegan feta or omit for dairy-free)
  • 2 tbsp Fresh Parsley , finely chopped
  • 1 tbsp Extra Virgin Olive Oil
  • 1 tbsp Fresh Lemon Juice

For the Creamy Garlic Lemon-Tahini Drizzle:

  • 1/4 cup Well-Stirred Tahini (sesame seed paste)
  • 2 tbsp Fresh Lemon Juice
  • 1 clove Garlic , finely grated or minced
  • 2 to 4 tbsp Warm Water (as needed to thin to drizzling consistency)
  • Pinch of Salt

Instructions

Step 1: Prep and Roast the Sweet Potatoes

  1. Preheat Oven: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper for easy cleanup.
  2. Prep Potatoes: Pierce each cleaned sweet potato 5–6 times all over with a fork. Rub the skins evenly with 1 tablespoon of olive oil and sprinkle with 1/2 teaspoon of sea salt.
  3. Roast: Place sweet potatoes on the baking sheet and roast for 40 to 50 minutes , or until they yield easily when pierced with a knife in the thickest part. (Note: If you are short on time, you can cut the potatoes in half lengthwise, rub with oil, place cut-side down on the sheet, and roast for 30–35 minutes until caramelized!)

Step 2: Prepare the Crispy Seasoned Chickpeas

  1. Toss: In a bowl, toss the rinsed and dried chickpeas with olive oil, cumin, smoked paprika, garlic powder, oregano, salt, and pepper until coated evenly.
  2. Bake: Spread the chickpeas onto the same baking sheet as the sweet potatoes for the last 20 minutes of roasting time, tossing halfway through, until warm, fragrant, and slightly crisp on the edges.

Step 3: Mix the Fresh Salad Topping

  1. In a medium bowl, combine the diced cucumber, cherry tomatoes, red onion, Kalamata olives, crumbled feta cheese, and fresh parsley.
  2. Drizzle with 1 tablespoon of olive oil and 1 tablespoon of fresh lemon juice. Toss gently to combine and set aside at room temperature so the flavors meld together.

Step 4: Whisk the Lemon-Tahini Drizzle

  1. In a small bowl, combine the tahini, lemon juice, grated garlic, and a pinch of salt. Whisk together. (It may thicken or “seize” up initially—this is normal!).
  2. Gradually whisk in warm water, 1 tablespoon at a time, until the sauce transforms into a smooth, creamy, and drizzlable consistency.

Step 5: Assemble and Serve

  1. Remove the sweet potatoes from the oven. Slice each potato open lengthwise down the center and gently press the ends together to open them up. Use a fork to fluff the sweet potato interior lightly.
  2. Divide the warm, spiced chickpeas generously into the center of each sweet potato.
  3. Spoon the fresh Mediterranean cucumber-tomato salad over the top.
  4. Generously drizzle the creamy garlic lemon-tahini dressing over everything. Garnish with extra parsley or a sprinkle of za’atar seasoning if desired. Serve immediately!
